Do I need a 3 egg mixture to make 24 basic cupcakes, or a 4 egg recipe?Also, what quantities of flour, sugar, butter do you recommend for 3 or 4 eggs? I thought it was 180g for 3 eggs and 225g for 4 eggs but have I got that wrong?
I weigh the eggs then use that much butter, sugar and flour.How many eggs depends on how big you like your cupcakes ie mega dome or flat? I would go for 4 eggs tho for 24 cakes.
4 eggs. Use small fairy cake cases, not the huge muffin cases. 8 oz sugar, 8oz butter, 8oz self-raising flour, 4 eggs. 160 degrees for about 20 mins.
If your doing small fairy cakes use 4 eggs 200g of everything else. That normally does me 16 muffin sized cases.
Thanks all - I actually did 225g with 4 large eggs and all looks good!
