Girls names to go with unpronounceable surname?

Please help! My surname is long and Italian/Greek sounding, begins with 'ch' sound and ends with 'is'. If we have a girl then the middle name will be Rachel, but we're really struggling with first name suggestions. So I reckon we should restrict to 1 or 2 syllables, not too unusual and definitely easy to spell. So far the only ones dh and I can vaguely agree on are:

For the purposes of this thread, I'm pretending your surname is Chipolatasitis.

Your names are good - agree you need one or two syllables. Avoid 'ch' 'k' and 's' in first name too. Names starting with vowels might sound best.

Thanks there's some great suggestions there... particularly liking Lucy and Sara. Mia's lovely too but already taken by a cousin, as is Alice but don't think it goes well with the 'is' sound at the end of the surname.

For a boy we're going for Jacob Leonard (both middle names are after grandparents)

You must absolutely give her a name that there is only one way to spell. Mia is good. Sara(h) is not. Also, bear in mind that often if there is a complicated last name, then people shorten it to the first letter. So she might be called Mia C. Just make sure that it rolls off the tongue. I have a name that is super short, first and last, but there are two common ways to spell my name. In the USA everyone spells the first name wrong and in England everyone spelled the last name wrong. It was nice to not have to worry about both names, at least.

Anna - simple, pronounceable and fits in so many cultures, so will sound OK with any surname. Also one of my fave names ever.

My first name is Alice, and you have no idea how many people can't pronopunce it or spell it wrong!
