Love the name Carmen, and think Rosa as a middle name is a great suggestion.
Personally I think Carmen Rocío or Carmen Isabel would be really pretty.
I think Carmen is a beautiful name and works great both in English and Spanish. Here are some names I have come across living here that I particularly liked and haven’t been mentioned (I think). At the moment in Spain, depending on the place, I think Lucía, María, Martina and June (Joon-eh) are the most popular girls names.

Although if you're not a Spanish speaker, it might be confusing for your child as everyone will automatically assume that a Carmen Ramirez is fluent!
