ways to spell may / Mae ?

I would go with May

But it just seems meaningless now - like Rose - SO overused it just seems like a filler name now.

Is there a particular reason you want to use it as a middle name, i.e. you're naming her after someone, or she was born in the month of May (I'm guessing not, or you'd be set on the spelling)?
Because otherwise, May/Mae is such a default, 'filler' middle name now, that I don't know why people bother with a middle name at all, if they're just going to plug May or Rose in there just for the sake it.
There are so many lovely girls names out there - simple, elegant one-syllable ones as well, if that's your bag - so why so many people default to these two is a mystery.
Our oldest daughter's middle name is Mae, it's a family name which has in the past has had both spellings. I prefer Mae as it looks better with her first name
Same with my niece Durham

Dn has Mae as a nod to her roots.
