Katrina would be my most obvious one.(i knew a Katrina who was always Katie)
I know this isn't a shortening, but one of dd1's friends is named Kate but always goes by Katie, which I like.No-one has suggested Katrine, which is also nice, there's a Loch Katrine In Scotland which is beautiful.
