To be pretty sure my toddler is 95% potato?

I’m sooo out of meal ideas and the poor kid gets a baked potato, beans and cheese at least 5/6 times a week!

Help me please 😂 We’re vegetarian so preferably meat free ideas.

Why not use Quorn to make spag bol, or curry or chili, well anything reallly? Meat free lasagne? pasta bake (with tuna if you eat fish) - we often just have pasta and a stir in sauce if we're in a rush. Vegetable burgers (and fingers) are really tasty too. Eggs? Scrambled on toast with cheese? Of bread rolls, hollowed out and baked with a egg in the middle?

For lunches I often do either carrot pancakes or sweet corn pancakes.
It's grated carrot/sweet corn, flour, milk and egg, made into pancake shapes and fried. My 12 month old loves them. I got the recipe from the Instagram account whatmummymakes - there are quite a few good ideas in there.

Non potato easy options...cheese quesadillas, scrambled eggs on toast, anything on a bagel with token veg sticks.

Try and stay away from meat replacements. He’ll eat the aubergine lasagna I make and chilli as long as it’s not too spicy.

Can you not just give her some of what you have? I cooked one meal and added more seasoning after I’d taken the DD or DS portion out. They loved spaghetti and pasta sauce, lentil chilli and rice, chick pea curry, quorn nuggets, scrambled eggs wish some toast to gnaw on.

Mixed bean chilli + rice (obvs not too spicy for your toddler)
Vegetable enchiladas + potato wedges
Lentil cottage pie
Omelettes
Mushroom stroganoff + rice
Curries (again, not too spicy, but good to start introducing spices), Cauliflower and chick pea is good, also daal
Homemade pizza
Tomato pasta + broccoli & peppers
Cheesy pasta + garlic bread
Pesto pasta + mushrooms
Teriyaki noodle stir fry (with broccoli, peppers and sweetcorn)
These are what I feed my wee veggie (has now gone vegan, so some things need a tweak!)

I really liked the Ella’s kitchen cookbooks, obviously not all veggie but quite a bit is. My daughter loves the Thai rice recipe. We also got some really tasty spinach bites from the freezer section in Tesco, we have them as a side but they could work as a “naughty” tea like a meat eaters might have fish fingers or chicken nuggets. (But healthier!)

Couscous is amazing! You just add an equal amount of water, stock powder if you like and put it in the microwave for a minute and then stir it round and it's done! You can then add fat - butter or olive oil - and something to flavour it such as roasted vegetables.

Also pasta is an easy dinner, just cook, add jarred sauce, add cheese/sweetcorn/whatever you like.

Veg soups with bread. Mine used to love Pasta with some veg that they could pick up and eat with there fingers with a little dipping sauce on the side. Beans on toast. Potatoe waffles and smilies. Veg stir fry. Various Toasties.

I make a Quorn lasagne quite a lot as it's my son's favourite. I also do risotto (you can put anything in), pasta dishes, omlette, soup... Most of which are veggie.

My toddler is veggie, her favourite easy meals are:
Tomato soup with cheesy toast
Chickpea and cauliflower curry
Little Roots nuggets, the sweet potato ones.
French toast and beans, might be a good way of getting egg into a meal.

For a really quick lunch we chop a courgette and a carrot and some mushrooms. Fry, then add a sachet of Uncle Ben's Golden Vegetable Rice, mix well and a splash of soy sauce. Stir fried rice! Great with veggie sausages too (of which Richmond Meat Free are the absolute best)

I have a veggie toddler that isn't wild about potato (unless it's mashed!) so I've got a few ideas!

It's amazing, you use cream cheese instead of bechamel and the whole thing is really easy. Macaroni cheese is always popular. He also loves chickpea curry and/or lentil Dahl with rice or naan bread. Thick lentil or sweet potato soup is also nice and easy to scoop up with a bit of toast. I also make this nice filo, spinach and feta pie- I'll try to dig the recipe out for you Smile

My daughter is 97% pasta. She will literally eat it plain. Yet somehow is growing as normal with no signs of scurvy.....

.... yet.
