To not do extra shifts after way I was treated

I work as a carer for a family, I care for a 21 year old girl with very high needs and no mobility who lives with her mum, sister and grandma. I have worked for them for just under 2 years. When I started there was five members of staff as the girl had needs that have been accessed at 2-1. After a year 2 of the staff left and the mum said she could not get anyone else (I think she actually wanted to try and save money as it is mainly paid for privately). Me and the other two staff ended up working 60 hour weeks for three months to try and get all the hours in. Most shifts I ended up on my own and it was such hard work. Anyway mum realised it could not go on plus got some NHS funding employed 4 new staff. About two months after this I did my back in and had to have two weeks off. Three weeks later I was hospitalised with a kidney infection. This meant I was off for another three weeks as I was very ill. When I got back I was told basically to not be off again or I would face disciplinary and now they had more staff I was not as essential. Fast forward to now and these 3 new staff have all up and left and moved to an agency (they are best friends and tend to follow each other) and I have got a email today telling me I need to do all these extra shifts Aibu to tell them to fuck off and I will do my set hours and that is it. At the moment I have DS that needs home schooling and DH is trying to work from home so to fit in extra shifts would be really difficult and I don’t really want to do them.
