Sausages stay anemic looking

Sometimes when I cook sausages they brown. Sometimes they stay pale. But they have always been cooked.

Just cooked a lack of chipolata sausages for 5 minutes longer than recommend in the oven. 4 were light brown and 6 were pale. The skins were were also still shiny. They were boiling hot and everyone was served up so I served them. Now I just want to check they are still safe?

I have a love hate thing with sausages. I mainly cook them as it's sometimes the kids will eat with mash and veg.

If the meat's cooked in the middle then they're fine.

Why are you putting them in the oven though? What's wrong with frying them so they go nice and brown?

I always cook my sausages for extra time because I can’t stand them being pale. In the oven normal sausages take about 25 mins and they’re always nice and brown. If they were hot inside they’ll be fine tho, just not as appealing to look at Grin

I find they brown up if I put a little oil on and make sure to turn them if I do them in the oven

I always cook sausages in the oven...they always brown.

Much easier in the oven imo...can just leave them and no grease splashing on the hob or counter.

worra I tend to whack mine in the oven cos it's easier to leave them to.cook with ds running around. Nicer in the frying pan though

Is it your oven? The same sausages cooked in the same way with an even heat shouldn't be vastly different.

What sausages are they? Big difference between Richmond and a premium brand.

I also cook mine in the oven. Bacon too. I think it's just as nice and far less messy.

A teaspoon of oil helps.

I like to do mine in the oven rather than in a pan where I'm apt to get distracted and end up with one side black and one side pink.

Once did a sausage casserole in the slow cooker without browning them first. Now that was not attractive...

Hi they were Asda extra special. Said 14-20 mins and I cooked them for 25

I hate frying them it means I have to stay with it and it feels much safer with toddlers in the house lol. Also the splats from the pan.

Probably were fine then. Just didn't look as nice

You can always inject them with a bit of tomato ketchup first if they’re too anaemic looking! Lol!

I always find they look very anaemic when cooked in the oven. I always grill mine because I prefer them crispy and browned.

I'd never cook a sausage under 25m in the oven, are you sure those weren't grill ot frying time? Was the oven hot enough?
I've never had sausages that don't Brown.

The smell fried sausage lingers. And you can't leave it, you have to manage it. And spitting sausages and kids don't mix well.

OP I have the same problem.

I tend to cook ours for double the time, but that's just bechSe we like them crispy.

Are you overcrowding the pan? They need a bit of air around them to go brown. I always find the ones in the centre of the tin don’t go as brown, so swap them around a bit at half time. But chipolatas are always tricky for me too, they almost boil in their own juice instead of crisping up.

I use Asda extra special ones and they take ages to brown in the oven. I think it’s just their ingredients.

I cook mine in the oven I burn them when I fry them. I put some oil in the pan roll them and bung them in you need to turn them halfway through mine always have colour,

We had Asda sausages and they took ages too. DH ended up grilling them to brown them. I will get a different brand next time,as I prefer oven cooked sausages too - way easier! - when they brown of course! Grin

I start mine in the pan and when they start to brown put them in the oven.
I couldn't eat a pale sausage, DH once made sausage casserole in the slow cooker without browning the sausage, I couldn't eat it.

I know what you mean, I always cook sausages in oven and some types go brown and others don't, even very nice ones. I wondered if it's the type of casing. We had sausages last night that never really went brown but were definitely cooked...and delicious!

We tend to do ours under the grill. Never had an issue with them browning 🤷🏼‍♀️

OP, I've just cooked the exact same sausages as you tonight (great minds) - mine were the same - partially browned and partially pale and I find the same thing with these sausages all the time but they were fully cooked.
Still tasted really nice though :)

Oh god, yes. Sausages in the slow cooker...eating those is like giving a blow job.
