I got a bit keen, well had some spare time and made two sponge birthday cakes. I've sandwiched them together with buttercream and apricot jam and covered entirely with buttercream icing, then tin foil and a tea towel to protect from the air. I need to decorate them, which I have time to do on Friday.

However the party is on sun. I made the cake yesterday afternoon. Is it too long?! Should I keep it in the fridge? Or remake? It's for 7 year olds.

It'll be stale by Sunday, won't it? Unless you can get it in an airtight cake container?

I would call that a practice and have another go Friday or Saturday. I would think it would be quite dry by Sunday otherwise.

buttercream should afford some protection against dryness. It’ll be edible.

7 year olds will probably scoff it! However, I've never managed to keep cake from Tuesday to Sunday! The adults will probably think it's a bit dry.

What the lady above said. Buttercream will keep it moist. Maybe cover it and keep it in the fridge? Take it out sunday morning for the party?

It should be fine to be eaten at the party and pretty soon afterwards if it's covered well. Don't keep it in the fridge though.
I've eaten week-long birthday cake and it was edible.

I think the buttercream will taste funny and the cake will be stale by Sunday. With the benefit of hindsight, I'd have made the sponges and then frozen them until Friday at the earliest.

I've frozen crumb coated cakes many times and I actually think the texture improves after freezing

It does mean however that you can't freeze any leftovers after the party if there even is such a thing as 'leftover cake'

That cake will be a disappointment by Sunday, you’ve made it far too early.

Buttercream should of been done the night before at the very earliest

OP rebake cakes and freeze them uniced. Make fresh buttercream and keep in fridge until needed, it will last until the expiry date on your butter. I wouldn't risk the one you did, if you had covered it in fondant it would have been fine.

Don't keep it in the fridge, just freeze it until Friday or Saturday.

YY. I remember looking for a cake for DH once and read the back of a shop bought cake. They are full of the weirdest ingredients. They will last forever 😂!

Freeze it, well wrapped in foil, defrost Saturday. It will actually improve the moistness of the cake.

Any chance you could take back the buttercream on the outside to a crumb coat and cover it in sugarpaste? If so it will be fine by the weekend. If not, I’d make another

Yes you can freeze buttercream but Ive never frozen it on a cake as it always lasts in the fridge anyway.

I think if it's the choice between freezing buttercream and eating 5 day old buttercream, ilm take the frozen kind!

I cannot vouch for it either though sadly, as I've never done it.
