To ask for some healthy, relatively easy meal ideas?

Just that really. Trying to eat more healthy as a family, but seriously lacking imagination. I’m hoping the collective wisdom of mumsnet can help save our dull teatimes. Thanks!

My children like pesto chicken

Lay chicken breasts or thighs in tray
Paste each with pesto
Put some thinly sliced tomatoes on top
Grate some cheese over (I use Parmesan)
Bake in oven till cooked

Serve with broccoli

Takes 5 mins prep and approx 30 mins cooking

Another favourite

Dry fry 3 rashers chopped lean bacon with 2 cloves of garlic
Then add peas to the pan and cook for a minute
Add rice and stock (or water)
Cover and cook in low heat until rice is done
Serve with grated Parmesan and crusty bread

Fritata with peppers, mushrooms, courgettes
Oven baked sweet potato falafels with pita and salad
Cajun chicken skewers
Peppers stuffed with cous with red onion and herbs and topped with mozerella.
Cod fillets topped with mango chutney
Fajitas with chicken breast, onions and peppers, served in wholemeal wraps with salsa
Tuna steaks in a balsamic glaze with veg and sweet potato wedges.
Veggie or mixed bean chilli with jacket potatoes or rice.
Vestir fried veg with rice noodles and cashews.
Lentil dhal and rice

Just make sure there are loads of veg, done protein, and some carbs, cook from scratch, and it should be healthy. Oh and get portion control right.

We're having sausages and mash tonight. One low fat sausage, one Linda McCartney sausage, sweet potato and potato mash, then loads of carrots, broccoli, peas and spinach. I'd consider it a pretty healthy meal as the veg makes up the bulk of the meal.

Frozen salmon fillets cooked in foil in the oven with a slice of lemon on top. Serve with carb of your choice (microwave sachet of rice or grains to be super easy!) and veg.

Microwave sweet potatoes in their skin until soft. Cut in half and scoop out the insides. Mix with a tin of mixed spicy beans and put back into the skins. Put grated cheese on top and bake until crispy. Serve with salad.

Par boil new potatoes, then cut into wedges and put in a roasting tray with halved cherry tomatoes, whole garlic cloves and black olives. Roast for about 10 mins, then add fillets of while fish (cod is nice, and you can use frozen fillets) and cook until fish is done.

Anything where you're using minced beef, add a tin of dried beans. Also chopped onion if you're not already using it, possibly a tin of chopped tomatoes. A small amount of chopped celery (1-2 stick does wonders for flavour too.

Chicken and veg tray bake
Chop into large pieces 2 peppers preferably different colours, 2 carrots, 2 red onion sliced into 12 chunks, couple of garlic cloves crushed, 350g new potatoes cut in half lengthways, you can use any veg that is good for roasting such as parsnip, butternut etc.
Place veg in a layer on baking pan drizzle over couple tablespoons of rapeseed oil and add salt, pepper and mixed herbs, mix it all together, place chicken on top of veg and sprinkle with paprika. Put in oven at 180 for 30mins, take out and pour in 200 ml chicken stock and put back in oven for 30 mins.
You can also use Salmon, sausages, pork chops etc to mix it up a bit. I just serve with extra veg and perhaps some garlic bread but not always.

fab sweet potato and spinach lentil dhal on the BBC good food website, seriously tasty, easy to substitute other ingredients to vary it up.

Bake Cod or chicken breast wrapped in parma ham, veg of your choice

Chicken rissotto. If you dont make you own stock, by fresh stock rather than cubes. Brown chicken and onions, then some field mushroom. Dose of white wine, add rissotto rice and stock slowy till its boiled off and rice cooked.

Pork chop, baked potato and veg

Grilled salmon filet, veg, boilded spuds if you want

Also lots of ideas in jamie olivers book 5 ingredients. Which I think is one of the most practical cook books for years

Quiche with sweet corn, onion, mushroom and grated courgette. Daal (in slow cooker). Every Wednesday we have h sandwiches with cucumber and carrot sticks, apple pieces and a banana. When they have eaten that, they can have pringles (bribe!)

nokidshere Like the sound of your pesto chicken, I will be trying that.

I have just made Rainbow Peanut Noodles.
Red pepper, yellow pepper and carrot sliced very finely into strips. A cup full of Edameme beans (you could probably used broad beans or peas), finely shredded red cabbage.
Stir fry for just a minute or two and add ready cooked noodles . Then toss the whole lot with a peanut sauce - peanut butter, soy sauce, lime juice, sweet chilli sauce if you have it and maybe slacken it up with a bit of hot water so it isn't too claggy.

Spread pesto on salmon, bake in the oven about 15 mins.
Cut potato or sweet potato into wedges, spray them with oil & add herbs / spices, takes about 20 mins to bake.
Serve with peas and sweetcorn or whatever veg you like.

My two yum this down.
