Mary berry roulade recipe help

For some reason my phone will only let me post in aibu! :(


I've made this roulade recipe many times before and it's always been fine, it's pretty basic, you mix egg yolks with sugar and then add in melted chocolate, this time when I did it it congeled and went stuff and lumpy and wouldn't mix :(


The chocolate was cooled as the recipe stated but not cold obviously as it was melted. The only thing I can think is that the eggs were quite small so maybe I should have added another yolk? Although once the sugar and egg was mixed it looked liquidy enough!


Any suggestions would be much appreciated!

The chocolate was too hot and cooked the eggs. It shoud be ok though

Do you think? It was definitely cooled, it sort of lumped together almost like it was the opposite and too cold like it was turning solid again if that makes sense?

You probably got water in the chocolate and it seized. Was the bowl damp, or wet spoon / whisk?

The bowl with the chocolate in didn't have any water in it as the chocolate was fine before mixing, don't think the one with the eggs in did either but can't be sure.

I feel like maybe if I'd gone in with a electric whisk I could have maybe got it back again but it specified folding in the chocolate so I didn't want to!

I'll try again and see what happens, frustrating as it's such an easy recipe!
