She always goes in the bathroom and turns the taps on, locks the door and would be in their all day given the choice. She is 5

I get her to ask so I can make sure she doesn't misbehave, she keeps messing up the bathroom.

That's not going to the bathroom OP. That is playing in the bathroom.

She should have autonomy over her bodily functions but isn't allowed to play with the water in the bathroom for hours on end. That is a different conversation

Find out what she's playing and try to redirect it into something less destructive, and explain that the bath can be dangerous if you're not there. She could get scalded or worse.

Put something over the top of the door so she can't close it fully so can't lock it.

Yabu to make her ask! 5 is old enough for you to explain she needs to go toilet, flush, wash hands and leave. Warn her that if she keeps messing up the bathroom then x will happen....i.e remove screen time for a day, make her clean up the mess or remove a toy etc. Maybe move the lock higher up or put a door stop on it so she can't shut it.
