With this for Christmas day. Want to do a low stress more med buffet style rather than a roast- just 4 of us (adults). Any ideas gratefully received! TIA

Potato salad and home made coleslaw and perhaps a pasta salad with peppers. Buffet style is a great idea.

Ratatouille.
Fennel, avocado and black grape salad.
Salad of mixed beans in viniagrette, eg green beans, broad beans, sugar snap peas.
Herby new potatoes.

I'd do figs and Parma ham for a starter.

A big tray of roasted veg is easy to do - peppers, aubergine, red peppers, par boiled small potatoes, garlic, olive oil. Bung in the over 25 mins before serving.

Also Brussels sprouts with bacon lardons (par boil the sprouts and fry with the bacon). That's a dish you'd have to stand over admittedly.

Could you maybe to a potato gratin the night before, chill in the fridge and heat it up on the day?

'Red onion'

Another starter/nibbles suggestion is salmon, cream cheese and dill roulades. Lay the tortillas on cling film, spread with the cream cheese - lay on the smoked salmon, squeeze of lemon on top with chopped dill.

Roll it up in the clingfilm to make a tube a refrigerate for a couple of hours then slice diagonally in bite sized pieces before serving. Stand them upright on a plate - they look and taste great. Easy peasy!
