AIBU to ask what I should make a vegetarian coming for dinner?

Don't do a meat replacement like quorn, some people don't eat them.

Don't do mushroom risotto or goats cheese, lol.

What would you be making for people that eat meat? Something that's your style of food is best, that way it'llbe easier for you and is more likely to be good.

Just cook some normal food that doesn't have any meat or fish in it.

Are they just vegetarian or vegan? Normal veggie is simple unless you only way meat & 2 veg normally.

Veggie chilli using bean feast as a base is an easy beginners recipe. Veggie lasagne, veggie tagine (loads of veggies with chick peas for protein).

Or if it's a kid & you aren't sure how picky they are, jacket potatoes, cheese, beans, salad, humour.

Mexican or curry are what I'd probably do, my DH is veggie and those are easy things to do well for veggies.

Ask them what they like? Presumably you'd ask a meat eater what they like too.

F you do a pasta dish, you could serve the meat part separately.

Likewise Curry.

I'd ask, if you can. I love Goats cheese, but get sick of aubergine. I'd be happy with even a Veg Pizza, though.

I made a Mary Berry mushroom and spinach lasagne with homemade garlic bread for my veggie friends recently and it was well received.

I second the no meat replacement. Also, no goat cheese, or any cheese-as-main-food.

Pasta sounds like a good idea.

I like to combine grains with legumes, in order to get enough protein. Rice with lentils or corn with beans are classic combinations. But that's more of a long-term nutritional thing, for one dinner, just pasta is fine.

Why don't you just ask the person who comes for dinner, though? Surely, they know best?

Keep it simple I say.
Pasta cooked with mixed peppers onions garlic mushrooms etc in a chilli tomato sauce.
Serve with salad and garlic dough balls and garlic butter dip.
I would love that. I'm veggie.

Please remember to have some protein in the meal I get fed up with being offered veggie meals without protein, as though I don't need it
and please, no mushroom risotto. I'm very happy with cheese though.

Fajitas, curry (with paneer is lovely), jacket potatoes, toad in the hole with veggie sausages, chilli con carne, pizza?

Avoid pasta and risotto - this is about 80% of eating out food options and it is miserable.

I'd make the same for everybody, for instance stuffed peppers served with orzo, or aubergine parmigiana with herby rice, or pea and asparagus risotto.
For a first course I'd serve a selection of Greek style dips with some interesting breads.

If you have time, doing a Turkish/middle eastern mezze spread is great for a mixed group - something for everyone!

Halloumi. DP does an amazing halloumi wrap with roasted peppers and red onions, sundried tomatoes, Mexican rice, (veggie) pesto and sour cream. Even my super critical meat eating mother loves it.

I've tried and tried to like mushrooms but I really don't, same with beans. I can have a little of each but if they overwhelm the plate then I just pick at it.

Yes goats cheese and veg tart as a starter is nice. Just oven roast some peppers and courgettes maybe red onion, roll out some frozen puff pastry on a buttered baking tray, put some caremilezed onion jam/chutney on and sprinkle over the veg and some feta and bake for 20 min.
