To ask for inspiration for my son's food tec practical?

My son is doing GSCE food tec, and needs to make 6 dishes that are low in fat, appeal to kids, and show a high technical ability.

So far he has made pizza (making his own bread, sauce,etc), paste bolognaise (making his own pasta, putting in hidden veg etc), and fruit tarts (homemade low fat pastry, creme pat filling).

He's now struggling for ideas. Low fat, appealing to kids is fairly easy, it's trying to think of something that has a high technical method that he hasn't used before.

Does anyone have an ideas that might help him out please?

A kids cooked breakfast - sausage, scrambled egg, home made potato smile face, baked beans in a hidden veg sauce and some homemade healthy bread.

I was going to suggest something with mayonnaise or a hollandaise sauce but they are not really low in fat...

home made chicken nuggets - shallow fried instead of deep fried. Home made chips - chop a potato and shove in the oven after sprinkling with olive oil.

Fajitas, making his own tortillas, salsa, guac?

Look in Hairy Dieters books for inspiration. V family friendly, low fat recipes he could tweak.

Turkey burgers, with home made buns? Or bean burgers?

Fish cakes?

Have a look at Hugh Fernley Wittingstall's beetroot chocolate brownies. So sinful, but actually not too bad for fat etc. Just tell him not to tell the eaters they're made with beetroot!

How about home made fish fingers (fillet a fish skill) and sweet potato chips?

Or maybe a pasta bake with wholemeal pasta and lots of veggies hidden in the sauce?

Chicken rice and peas or griddled chicken salad, soup of some description. Tortillas or Mexican food.

Would marinating chicken or making a spicy dish show different skills?

Raisin bread - bread making, working with yeast. Or alternatively ham and cheese bread rolls (ham and cheese cooked inside).

What kind of skills does he need to demonstrate? Something like make your own herby pasta kind of thing?

Probably not hugely technical but home made chicken nuggets or fish fingers and wedges (baked rather than fried obviously) served with a tomato salsa?
Chocolate mousse made with avacado honey & cocoa (google vegan chic mousse)?

If you eat pork he could do a boiled ham with cabbage (Irish recipe) and potatoes, pork chops in orange sauce.

I like the suggestions of baked goods with hidden vegetables.

How long will he have to cook the dish?

Paella or risotto also sounds nice.

Thanks for all the ideas ! He's already made bread, pasta and pastry, so it's got to be something other than that ideally.

Something the bechamel sauce is a good idea, or mousse.

And I love the idea of beetroot chocolate brownies, although I may just get him to practice those at home - lots of times!

OP they are really nice, and my DCs and H loved them until I told them they were made with beetroot, at which point they became toxic. Really good though! Smile

Meringue: technically quite different to the others and fat free!
Fruit sorbet served in wafer cones.
