I'd cook the chips, then slice the brie and put on on the chips, top with the jalapeños and put it all under the grill for a couple of minutes until it's bubbling.

I should say that I often have chips with mozzarella and gravy so there is a precedent. It's just that I've run out of mozzarella and have a surfeit of Brie.
