To ask for good pie ideas

Posting here for traffic. Dp's birthday tomorrow. He's not got a sweet tooth so I thought I'd make him a happy birthday pie for our tea instead of cake. I want to do something special so not sure about the filling. Anybody got any good ideas/recipies. I have Paul hollywoods pie & puds recipie book but I've already tried most of those.

I usually do a bog standard steak and kidney.

However, years ago when I visited my best friend in Australia I was amazed at the pies they sold routinely in shops. Things like cauliflower cheese pie!!!!!

My favourite times a million was a creamy scallop and prawn pie. I seem to recall it had a mild mild curry sauce, but the sauce was a white sauce with a touch of curry powder only.

God. Amazing. I think you could do it with big fat king prawns and white fish.

Oooo scallop and prawn sounds good, he was saying the other day he wants to try scallops so may consider that, thanks!

Love scallops. You can get some nice fat frozen ones from Lidl I think. (Or Aldi). Just defrost and shove in raw. They will cook when the pastry browns.

Is it just me or does no-one seem to sell the scallop with the roe on any more? That is another thing I love. Cooked scallop roe mashed with a little bit of butter.

I know it's not pie but I made my DH a giant sausage roll that spelt out his name as a birthday cake this year. He absolutely loved it!

Ham and leek pie is what my Dh loves.

The giant scallops are from Aldi's frozen section as I have two bags in my freezer 😋

Fish, mince and cheese, steak and mushroom, bacon and egg, chicken and leek, red onion and cheese, curried vegetables - all v delicious pie fillings and easy to make. That's before you get to all the amazing fruit combinations :)

I love traditional Russian coubliac but I adore this particularly attractive and tasty version: //www.bbc.co.uk/food/recipes/salmon_and_herb_39674

It's much easier to make than it reads, it looks splendidly festive and you could spell out 'happy birthday' and/or his name with another sheet of filo (fold it several times before you starting cutting out the letters) and use eggwash to stick them together and secure them to the top.

I made a variation of the hairy bikers chicken, ham and leek pie the other week adding mushrooms. Went down very well!!
