Why do I keep getting rv that's not chocolate but just cake with red food colouring?

TaterTots Thu 18-Aug-16 08:38:02

My local bakery (which looks like it belongs in the 1970s) has one in the window which is basically a Madeira with a dribble of red food colouring in it. It looks like the chef had a nosebleed grin

Are you sure that not a 70s style swirl cake?

Red velvet cake needs to slot off, it's gross

Yep, should contain cocoa powder

Proper RV cake is delicious. Lots of horrible versions around though.

OohMavis Thu 18-Aug-16 09:19:40

It should have chocolate.

Water icing =/= frosting though... Buttercream is the equivalent there.

PaperdollCartoon Thu 18-Aug-16 09:22:08

Yes Red Velvet cake is chocolate. And now I want some.

DameDiazepamTheDramaQueen Thu 18-Aug-16 09:32:29

Cream cheese icing is what it should have!

Queenbean Thu 18-Aug-16 09:36:32

Icing and frosting are different!

HermioneJeanGranger Thu 18-Aug-16 09:36:51

Red velvet cake never tastes as good as it looks sad

FallenStar3 Thu 18-Aug-16 09:43:47

Red velvet cake is chocolate cake, with red food dye, its method of preparation is different to standard cakes making the cake extra moist, my DM makes some lovely red velvet cakes

Mermaid36 Thu 18-Aug-16 09:46:17

RV cake should have cocoa powder and buttermilk in it - not just red food colouring...its the chemical reaction that makes the red colour

FallenStar3 Thu 18-Aug-16 09:47:53

mermaid yes coca powder and buttermilk but it still require red food colouring

DameDiazepamTheDramaQueen Thu 18-Aug-16 09:52:09

Original recipes have no dye, they use beetroot.

SteviebunsBottrittrundle Thu 18-Aug-16 09:53:58

I have had some rubbish RV cakes but all have had chocolate / cocoa in them. Yanbu.

Real red velvet cake shouldn't have food colouring of any type (artificial or beetroot) it's an American cake made with a specific type of Dutch cocoa powder. Definitely cream cheese frosting though! Neros do good red velvet cake!

HeCantBeSerious Thu 18-Aug-16 10:54:15

My red velvet has cocoa and buttermilk and vinegar in it and is to die for (American recipe). However, it's very hard to get it properly red in the UK with anything but liquid food colour - easier in the US because the E numbers banned by the EU are still available there.

The English cheesecake company sell a red velvet cheesecake that looks screen licking good and has a chocolate layer but somehow it's the profiterole truffle one that ends up in my basket. grin

tinyterrors Thu 18-Aug-16 18:11:46

I've tried a few red velvet cakes and they've all been disappointing. I've tried making my own but they never taste as good as they look.

HeCan'tBeSerious if you don't mind me asking, what recipe do you use?

FatalFemme Thu 18-Aug-16 18:14:05

Aaaaahhh! I always wondered why people were so keen on red sponge. Now it makes sense.

Artandco Thu 18-Aug-16 18:15:43

I make it. It has cocoa powder, buttermilk and beetroot in. It's very tasty

Juanbablo Thu 18-Aug-16 18:20:38

I LOVE red velvet. It's also ds1's favourite. It definitely tastes of chocolate. Doesn't it have vinegar of some kind in it?

Artandco Thu 18-Aug-16 18:25:21

Oh yes mine has cider vinegar in, it reacts with the buttermilk

HeCantBeSerious Thu 18-Aug-16 18:35:59

This one.

For the frosting, use full fat Philadelphia only, and whatever you do use it from the fridge (not room temperature). It's another thing that's different stateside.
