Please can people share their simplest recipes for those nights where I can't be bothered to cook. Preferably with prep time of 10mins or less (unattended cooking time can be much longer), yet still reasonably healthy.

I never really know what is meant by healthy but my laziest meal is a baked omelette using frozen chargrilled Mediterranean veg, just fill an oiled baking thing (casserole dish or cake tin?) with the veg, season with aromat and pour beaten eggs over then crumble feta all over that and bake for 20 minutes or half an hour. I eat it with raw spinach but I'm sure other veg are available!

Frittata is pretty painless particularly if you have left over veg. Just as many eggs for the depth you want whisked with a fork, chuck in veg, fry it all for a couple of mins then chuck under the grill to cook the top. Can put grated cheese on top of you want. Serve with salad.

Microwave baked potatoes (you can buy pre roasted frozen potatoes) with pre grated cheese and baked beans - 6 mins

(I'm sure that's healthy).

Jambalaya/baked risotto. Chuck risotto rice, 200g cherry tons and some handfuls of spinach in pie dish. Cover with stock. Put lid on. Bake for half hour. Add cheese if you like at the end. Easy, fast and imo healthy

Can of spaghetti hoops / ravioli. Heat in pan.

Do a couple of poached eggs. Bung on top of spaghetti hoops.

Baked potato done in the microwave, baked beans done in the microwave, cheese.

Scrambled eggs with smoked salmon on toast. Cook the eggs slowly on a low heat for the best flavour.

Stir fry with onion, carrot, broccoli, mushrooms, tofu and/or roast chicken, straight-to-wok noodles, garlic, soy sauce and sesame oil.

'Mediterrainian Pasta Salad' - Cook pasta, chop feta, olives, cucumber, tomatoes, peppers. Drain pasta and add chopped stuff in with a little olive oil and basil (fresh or dried). Hold lid on pan and shake to mix.

'Spicy butterbeans' - Gently brown chopped onion in veg oil. Add curry powder, garam masala, lots of tomato puree and a few chopped tomatoes (you can use tinned tomatoes, but drain the liquid off first). Add butter beans and heat through. Serve on toast.

Stir fry with noodles. Chop a load of vegetables. Stir fry in sesame oil with ginger, chilli, soy sauce and honey. Ready in less than 15 minutes. It works well with chicken/quorn/prawns if you want.

this chicken noodle soup is great. i roast some chicken thighs when I'm cleaning the kitchen the night before, and use a packet of pre-cut stir fry veg. On the table in 10mins.

Leek and potato soup - boil potatoes, leeks and onions (approx. 1 large potato and 1 leek per serving). Mix up stock in a measuring jug. Drain water, add some stock and blend with a hand blender. Add more stock/a bit of milk to get the desired consistency. Heat through, serve with cheese and crusty bread.

We do pesto pasta with veg,
veg stir fry,
baked parcels- chicken or fish with veg in. Serve with cooked rice or noodles.
baked potatoes with fillings
salad with baked fish,
one tray roasted Mediterranean veg with baby potato served with cold cuts or steak.

My friend showed me a really nice but quick curry dish, get the rice on straight away (or use microwave), then fry onions, garlic and chili in a pan. Add chicken in thin strips to speed up cooking time and any extra veg you want then some turmeric. Throw in about half a jar of mango chutney and fry for a few mins then add a can of coconut milk and simmer for a few mins until rice is ready then serve.

Alternatively chop all veg up for a cottage pie/ stew/ bolognaise the night before and stick in a slow cooker before work.

During the week I use a Lekue rice cooker, 13 minutes in the microwave cooks all rice and quinoa. Alternatively some from of noodle on the stove (5mins max).

Then I either do a stirfry prawn, chicken or beef with some veg.

Last night I did sea bass wrapped in foil with ginger, spring onions, tbsp of soy sauce in the oven at 180 for 10 mins whilst the rice was cooking then chucked in some steamed asparagus. Took about 20mins including the oven heating up.

Check out Hello Fresh website most of my go to recipes are from when I subscribed to their box and they are all around 30 mins.

Devil that recipe sounds great. Do defrost the veggies first or cook them from frozen? I know it's a stupid question but I want to be sure.

Greek salad and gazpacho soup are our go-to recipes mid week. It's just tomatoes, cucumber, half a red pepper, olives, green leaves and feta (and a simple olive oil and vinegar dressing). Gazpacho is the same, without the cheese and green leaves. And some added bread to make it creamy. I grew up on gazpacho, but not sure whether all kids will eat it.

I just had this for lunch and it was lovely - precooked and sliced peri peri chicken, Mediterranean cous cous (from a packet), cucumber, cherry tomatoes and lettuce all in a wrap. Yum!

Chuck garlic, chili, drained chickpeas, olive oil, cumin and one egg into food processor. Blend. Scoop out and form balls/mini pattys. Bake for 10-15 mins.

We tend to roast a big joint of meat on Sunday and use the leftovers for the rest of the week. Yesterday was a beef fillet served last night with asparagus and salad, tonight in a Massaman curry and tomorrow in fajitas. These only take about 10 mins to prep.

Peri peri chicken baked in oven for 30 mins, served with pita and salad.

By prepared salad, tip a can of tuna, sardines or whatever fish you like on top. Perfect meal for me.
Alternative put eggs or meat or fish with olive oil in pan, add veg that you like to it. Stir a bit and eat in 10 mins.

12 large tomatoes, close of garlic, 1 onion, bit of basil and oregano and some olive oil. Mix all together in a food blender.

Pour over cooked Penne and warm through.
