I am SO bored of what we have for lunch - usually quiche and salad.
Please inspire me.
What can I have/add to my supermarket shop?
Am just preparing for me, two toddlers and so don't want to spend ages cooking - we all (with the older DC) have a good supper most days.

I'm at work so am lucky enough to have an on site restaurant so today I am having baked sweet potato and a large salad pot (carrot, olives, gherkins, sweetcorn, tomato&onion salad, quinoa&squash) & a Diet Coke. Lush

Quesadillas are a firm favourite here. Just chuck in any veg that needs using or frozen peppers/sweetcorn and children love it.

I normally make big batches of soup and freeze it in portions.

Other favourite lunches include-
Leftovers from dinner!
Scrambled/poached eggs on toast with things like avocado or spinach
Toasted wraps filled with basically anything (cheese and chilli is my favourite)
Chorizo and chicken spicy tomato pasta

Smoked mackerel with rocket, spinach, tomatoes and salad, and pineapple chunks. I have this quite often. Otherwise sandwich, pate on a bagel, ham salad, leftovers.

It varies on what I'm doing:

If I'm shopping in town and fancy some dinner, I'll go to a cafe and have an overpriced sandwich/toastie/panini and a coffee. However, if I went into town earlier and got a coffee first, I'll nip to a supermarket/boots to get a meal deal (usually pasta) and some buffet type snacks!

If I'm at uni and I'm still there for dinner, I either grab a subway or a meal deal from the Uni's shop!!

If I'm at home, I either have a sandwich/toastie/toast or noodles. Occasionally I will have baked beans and cheese with either toast or a baked potato!

Salads don't have to be boring! Some time back I got this book Salad Love

Not only does it have loads of good recipes but it is great for giving you ideas to then create your own thing.

This week:
Monday - rocket, melon and feta cheese
Tuesday - bresaola, nectarines and cashew nuts
Wednesday - ham, crumbly Lancashire, blackberries and walnuts
Thursday - roasted Mediterranean vegetables and couscous
Friday - Little gem, cottage cheese and hard-boiled egg

Today we had smoked mackerel pate on toast and it was lovely. Take the skin off a pack of smoked mackerel fillets, put them in a food processor with a tablespoon of creme fraiche, juice of half a lemon and a know of butter, quick whizz and it's done. My 2.6 year old and 11 month old loved it.

We have a big lunch but a small supper/tea/dinner. Here's what we're having this week:

Tomato soup and french bread. You can make it yourself by blending up a two big or three small ripe tomatoes, a large clove of garlic, half a red onion, a teaspoon of paprika, a tablespoon of worcestershire sauce, sugar and salt to taste. I use a tablespoon of brown sugar and a teaspoon of salt. Or canned version if you don't have time.

Give some large potatoes a zap in the microwave and then cook them on a lowish heat for an hour. You can do other things while you wait for them to crisp. We have them with beans (you can make baked beans by using the tomato soup recipe as a sauce and simmering pre-cooked beans) or any other topping you prefer. Sweetcorn, mayonaise and tuna is popular in this house, or cheese and butter. Anything you like. Even left overs from dinner.

A hard boiled egg and soldiers.

An omelete with various fillings. We have mushrooms, ham and cheese.

French bread pizza. Just toast some French bread with pizza toppings

Make a simple cheese sauce (butter, flour, milk and cheese) and mix it with macaroni and chopped baby tomatoes.

Hotdog soup: It is very simple. Chop hotdogs with leeks and cook with gnocchi and chicken stock. We have it with bread.

Oh dear.
I was coming on to say that today I had cheese and tomato quiche with salad.

I usually have a tuna salad or a jacket potato.
Or a wrap with tuna and salad.
I'm very predictable but it's what I like!

Some kind of pulse and veg soup with bread

Veggie burgers (chickpea and mixed veg) or sausages (quinoa, spinach and butternut squash) that I make as a batch and freeze so they just need microwaving

Omelette with veg and new potatoes

Today we have spinach and red lentil kichdi. I add the salt and most of the chilli to ours in some hot water after taking DS's portion out as he is only 8 months and doesn't have much chilli in his. DH was going to add chicken to his but says it doesn't need it.

This week for work I took tomato sandwiches made with seedy bread, a little mayo, a little butter, a little salt, lots of black pepper, plus fruit - two satsumas & a pear.

I had the same every day - I tend to do that - stick with a favourite for ages & then change completely.

Today at home I had a bowl of porridge Smile
