Or is that painfully middle class of me?

No one else in my family likes this, so I have to do it specially for me and me alone. Bit of a pita.

Complete and utter first world problem.

It's people like you who are causing the world to implode.

Then do it for me too! Especially if you also add courgettes

YABU as it's entirely revolting.

DH loves it and has to go to MIL's house for it. Two birds with one stone; some peace and he gets his dinner there instead of concocting mad stuff in our kitchen.

Have you tried it as parmigiana di melanzane?

Oh god yes. I love anything aubergine. DH doesn't. This will go against him in the divorce as it is clearly unreasonable behaviour to deny me aubergines.

Yes that is absolutely delicious especially with grilled halloumi. Mmmmm

Some of you really need to get in the sea.

Fabulous baked in the oven, sliced in half lengthwise, flesh slashed and olive oil drizzled over it.

Then gently heat more olive oil with some crushed garlic, and when the aubergine is softened, pour over the garlic-infused oil, top with crumbled Feta and sprinkle with freshly chopped herbs of your choice.

Fabulous!

If you soak the slices of aubergine in salt water for 20 mins, then shake dry & coat in flour, fry as you're doing, then drizzle with honey....

Sounds lovely.
I make lasagne split now - one with soggy tasteless pasta for my family and the other half with delicious fried aubergine.

YANBU. At one stage I did consider calling a daughter Aubergine - fortunately I never voiced this aloud, and the hormones receded a bit. But grilled or burnt aubergine is lovely.

I love it (although not actually charred, but fried/grilled). Love it roasted, too. Oh, and do the same with courgettes and I will be your friend forever.

No one else in the house here likes it either. More for me Grin

OK, bibbity , since you don't want the courgettes, I'm leaving.

SalmonMaki is my aubergine/courgette buddy now.

try slicing thinly then get a mix of 3 tablespoons of plain flour &1 tablespoon of rice flour (for crunch). 1 tsp turmeric, 1/2 curry powder, 1/2 tsp cumin, 1tsp or more (to taste salt) mix with some luke warm water into thick pancake like paste that will adhere to aubergine. if you like it spicier increase curry and cumin mix, I think tastes better lighter in flavour to taste aubergine.

dip and fry on medium-high heat, shallow or deep, I think comes out crunchy deep. I love it, usually served with rice but you can eat it however you like it. don't put on kitchen towel when draining, can go soggy under, better on bare plate and eat straight away

grilled aubergine just brushed with oil served with grated parmesan nice too...

I love aubergines lol

This might be a complete load of rubbish or actually true, I remember reading (before internet) that aubergine is the only fruit naturally containing nicotine. I have always liked it and thought this might be one of the reasons. Ex-smoker now. Ahem! I expect someone will totally disprove this very boring fact. Grin

oo rookie I agree lasagne with aubergine is wicked! theres an Italian dish where its layered with aubergine slices rather than lasagne sheets deeelish!

Yes. Quite nice, but really aubergines need hot melting cheese so parmigiana wins.

OR
thin slices of aubergine with a crispy tempura style batter deep fried, so very crispy batter encasing soft unctious aubergine, had this in Crete and it was food of the Gods.
