Breadcrumb replacement?

It's for our Christmas stuffing, which traditionally is crammed full of loveliness but this year needs to be free of gluten, egg, dairy, soya. So I can't use gf bread, and I don't really want to use a stuffing mix as the flavour will ruin our family recipe :) what can I do about the breadcrumbs? I'd also like to use 'breadcrumbs' for making giijons, fish cakes etc

Not sure if it would work with stuffing as I use a rice based one instead of breadcrumbs but for coating for goujons, fish cakes etc I use gluten free cornflakes.

I suppose rice could work but would be an altogether different stuffing. Which rice do you use?

You could also use Rice Krispies to coat your goujons. I think annabel karmel uses them on a fish finger recipe.

I use a glutinous rice for stuffing. Works quite well.
