Allergies and intolerances

I'm very unadventurous & a bit faddy; I have a new exclusion to try....help?

So far I am:
egg free
dairy free
coconut & almond free
No green veg (except green beans)
No raw fruit
No onions & garlic & mushroom
No pulses
& I struggle with bit (nuts/oats/seeds)
& I don't eat rice/pasta/noodles

I am doing this under medical advise!! But my dietician is a bit "well I'm sure you'll find something" & "it'll be fine"

But yesterday the GP asked me to go Gluten free with a possibility of non coeliac gluten intolerance - which if it is diagnosed means some of my other exclusions might be able to be re-introduced.

I'm quite a meat & potatoes girl (which is good as that's about all I can eat) & I've given up my planned spelt bread

But my question is "Where do I go from here?" - what on earth do I eat? I have to say the everything free sausages I picked up today at the butcher were very uninspiring so I got some steak too (no mushrooms no onions - so chips then?)

Katy- we are wheat/gluten, soy, egg and dairy free due to DD2 and DPs allergies and mine and DPs coeliac disease.
I'll try and dig out some of our meal plans but it honestly isn't as bad as you think once you get used to it.
You do have to cook from scratch a LOT, though.

Roast chicken and veg, (gravy made with GF flour)
Home made kale falafel and salad
Beef stew with GF pastry top
Steak and chips (always a good one when eating out!)
Pork casserole, spiced cabbage and mashed potatoes
Lamb keema curry and rice, home made naan
Chicken curry and rice/ home made chapattis (we eat a lot of curry)
Portuguese monkfish rice stew

This has loads of great recipes in it, worth buying, also second the Pig In The Kitchen link someone else posted.

Essentials you need to think about:

Egg replacers: I use a mixture of linseeds ground in a spice grinder and egg replacement powder depending on the recipe, but it is as well to have both in.
GF flour: I use all sorts of different flours in different quantities, eg teff, potato, tapioca, rice, sorghum etc but until you get into it it's fine for cakes, pastry and sauces etc to use a perfectly good mix.
I have found the best mix to be Doves Farm, I always have in both the self raising and the plain.
Xanthan gum is useful to replace some of the 'gumminess' you lose by using gluten free flour and definitely means it's easier to make pastry, chapattis etc which you can actually roll out.

Roll out pastry etc between two layers of cling film, without fail, or you will regret it.

Milk substitutes- I use Koko which is a coconut based one but you may struggle with that, maybe the best thing to do is experiment until you find a milk sub you like- there are loads of different ones available. Would you be able to tolerate rice milk do you think?

Sadly most of my meals (since the major cull) have been bread based - I guess I'm down to stews/casseroles/stirfrys & loads of potatoes

I will really miss doughy bread

The egg replacer has methylcellulose in which is a bowel regulator; so I probably can't use it (I'll check with my lady tho' in case)& I'm a bit scared of linseed for the same reason.

I've never really had 'milk' so I won't miss it but I find avoiding hidden milk very hard I found it in herbs in olive oil this week fgs!

It's a major restructure of my life really & I don't think I'm ready for it Blush

Sorry Katy- I realised after I posted it that lots on the list were unsuitable.
Stews are great anyway, and you can just leave out the green veg/ add carrots or whatever veg you prefer, I just posted a random list of stuff we have had in the last couple of weeks.

If you would like I can post some recipes for things like GF pastry or any of the recipes I have mentioned- I can't think of anything else, weird blank space in my mind.
Bread is unfortunately a problem unless you are getting it on prescription- most shop bought gluten free bread has egg in it. We have the added problem that the ones which don't have egg, normally have soya instead, but you might be lucky and find one you can eat- perhaps try googling 'gluten free vegan bread?'

Chips are hit and miss, but are often ok- you just have to check. Lots are just potatoes and oil- we do our own wedges or oven chips if we are having steaks at home.
Egg replacer probs- unfortunate but if you google there are lots of other egg replacement ideas, some involving vinegar and bicarbonate, apple sauce, etc. Lots of recipes out there - I search for vegan recipes a lot.

I think like your soya, my seeds are a bit of a problem lots of recipes use them as a substitute

Baked potatoes are a good standby too- buy some Pure dairy free sunflower spread and they can be really tasty.
You could try with tuna, with chopped tomatoes, chopped up ham? Or with bolognese sauce or chilli?
Can you eat hummus or baked beans? Nit sure if you are counting them as pulses?

Hazelnut and hemp 'milks' are nice and might work for you.

Banana makes a great egg replacer in baking and also in pancakes.

Can you eat sweet potato? They are lovely baked and served like a jacket potato, or mashed, or made into wedges. Might make a slightly different accompaniment to break up the monotony!

The parsnip soup without the onions or seeds might work

No beans Sad they were a favourite

Baked potato - yes -I'm going to have to get over my 'chemicals' thing aren't I; for years I have eaten as naturally as I can, nothing terribly processed/created (apart from sausages & baked beans really) just mixed and cooked

I did buy Doives Farm Flour & Bread Flour - which should I use, I wonder?

I used to put onions& garlic in the pan before I decided what I was cooking & I have found gluten free soysauce

Have you tried asafoetida as an alternative to onions and garlic?
Some Indian cultures don't use onions and garlic in cooking (I forget which ones, sorry for being vague) but use asafoetida instead to give a similar flavour. It is also called hing.
Just an idea, might create a bit more interest?

I think the doves farm bread flour just has added xanthan gum, so if you use that you could reduce/ leave out the xanthan gum in the rolls recipe?
