which is best in pancakes, oat or coconut milk?

No knowledge of either of those but I once used rice milk. The pancakes I made immediately for ds were fine and I out the batter aside until dh came home. In the meantime it had fermented and they were "interesting"!!! (and not in a good way)

Before discovering my dds egg allergy, and waving farewell to pancakes <sob> we used oatmilk and they were fab. No fermenting either smile

Milk and egg free pancakes:
1 cup white flour
3 tablespoons white sugar
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2 1/2 teaspoons non dairy marg. (Pure sunflower is good)
3/4 cup water
+ 2 tablespoons water (to replace eggs)

Sift dry ingredients together into a mixing bowl.

Melt the marg in a frying pan, tipping pan side to side to coat the pan.

Pour melted marg in a small bowl, add water. Mix well

Stir liquid into dry ingredients until thoroughly moistened. Lumpy batter is fine.

Cook over medium heat

* I replace 1 teaspoon of water with vanilla extract (for sweet pancakes). You can add a bit more water if the mix isn't runny enough for crepes.

We have also used oat milk for pancakes because of Cow's milk allergy and it works fine smile
