Allergies and intolerances

gluten and maize intolerance, any kind of bread substitute?

Hi, My MIL has been diagnosed gluten intolerant for many years now, but a few years ago she has been tested and found with a very high reaction to maize (corn) as well, which I gather is not that uncommon. The problem is she is very stubborn and ignoring the last part. She is not getting better on the gluten free diet... guess what it is full of corn syrup, starch and flour!
Can you find an substitute to gluten free bread for her? Commercial one, I offered to bake one for her but it has been dismissed...

Saying she haven't given up chocolate in the decade, I checked her favourite in the cupboards and they are definitely not gluten free... Confused. She doesn't seem to understand the concept.

Advice on how to convinced a 75 yo to listen would be appreciated too!
It is affecting her life a big time too (she also have gout to make things simpler!)

My aunt has gluten and dairy intolerance. She was diagnozed around the same age as your mil, she will be 80 next year, and has managed to change her entire diet around, so feels better than in years. She mostly bakes her own bread, cakes and biscuits though. She uses rice flour.

Thanks quint I haven't have many luck looking around, I might try to bake something and see if the improvement will help her change her mind.

We have recently added corn (and oats) to the list of grains not allowed and have no bread what so ever. I have tried a few. There is a couple of things on here but they don't taste great. Yeast is also out for us too and I have yet to find a yeast free, corn free, gluten free bread. We eat pancakes and cakes instead!!

Have you tried the Genius gluten free bread range? It's easily found on the 'Free From' section in Tesco's and Sainsburys,]. I've been gluten free for years, so can recommend this as being the nicest I've tried so far.
The link I've added give some info re the ingredients used, and it states that they use rapeseed oil in it.

I bake my own with rice flour, all the commercial ones give me hives. Am also allergic to rapeseed oil. Really interested to hear about the allergy to maize, I am and I think ds is too. Are all these grains linked in some way?

From what I can gather the Zein (the glutenous part in corn) is similar enough to trigger a reaction for a large part of the population who is gluten intolerant (close to 30%).
Genius bread has corn in it, but thanks anyway EE.
I think she will have to make her own, working on that.

Any good recipe? so the bread can rise at least a bit.
