Best American pancake recipe

I love American pancakes but whenever I make them they are a bit shit.

Does anyone have a great go to recipe they can share?!

I live in the southern US. My recipe is....
1 cup self rising flour
I dessert spoon sugar
Good punch of salt
2 eggs
1/4 cup buttermilk (or plain yogurt)
Milk to make a thick batter.

Mix dry ingredients,
Beat in eggs and buttermilk/yog with enough milk to form a smooth thick batter.
Heat a frying pan on medium low. Rub with butter, spoon in mix to form 4" circles. Don't cook too fast. Serve with bacon and maple syrup. Y'all gonna love it

cup of flour
1 egg
half a teaspoon baking powder
1 tablespoon melted butter

a few tablespoons milk until desired thickness (you want the texture of creamy yoghurt)

I think it's Jamie Oliver (sorry) who separates the eggs. Whisk up the egg whites and fold them in to the batter (the yolk is in there already). Very light and fluffy.

Mine is

200g self raising flour
200ml milk
60g melted butter
1tsp baking powder
Pinch of salt
1tblsp sugar
3 eggs

Whisk everything together in any order you fancy! Melt a knob of butter in a frying pan then spoon the mixture in the centre of the pan. Let it cook until slightly larger bubbles start to appear on the top and the sides look 'cakey'. Flip it over and then let the other side cook.

I make these at least once a week and they never fail me.

My brother makes up the dry mix, with milk powder in it & has it in a container ready to use. then just mixes eggs & water.
I can eat a tall stack of them easily .

I mean this with the utmost respect, but if you're following a recipe and yet not using the type of flour they specify, then the end result is always going be a bit shit are they not?

Controversial but the secret ingredient for really fluffy pancakes is cottage cheese- no need to blend furiously as somehow it smooths out and you can’t taste, but it adds something good!
I use this, roughly. Mostly make with flour instead of oats (add the extra weight) and never add sugar.

We had visitors last weekend, I cooked the pancakes and the teen declared them “the best pancakes” she had ever had. Her dad was rather crest fallen Grin.

They don’t have any sugar in them, but that is just fine if you serve with maple syrup. I love blueberries in mine because with makes it like a dessert Grin

I think I have some blueberries in the freezer, I might make some tomorrow now I'm thinking about them! Grin

American here. Make sure the milk is lukewarm when you add it and that you let the batter sit for at least twenty minutes (ten in a pinch) before frying.

Also barely stir the wet and dry ingredients together. The batter should be lumpy!
