Are pork chops rank?

whattocook · 14/10/2021 14:21

Picked up some pork chops today for a change I have never cooked them before. OH has made a big fuss about it saying he can't believe I've bought pork chops "you've never cooked them the whole time we've been together"

Are they really that bad? I was just going to do some mash and veg with it.

Confused They're a totally normal food in my book. Why is he being so rude? Cook them for yourself and don't share!

I love pork chops , they must be a bit burnt though!

What a weird question, what is rank about them? We have them weekly and they are as far from rank as you can get

Bizarre. I mean, sure, maybe you haven't cooked them before. But all the more reason to do so now as it gets boring eating the same things over and over. Just make sure you don't overcook them and it will be grand. It's a very classic English food.

Of course they’re not ‘rank’. How very odd.

They do need to be cooked well, though...Nothing nice about tough, dry pork!

I agree with pp - If he’s so appalled he doesn’t need to have any, does he?

Love them, my favourite part is the really classy and refined bit at the end where you gnaw the bits of meat off the bone.

Can't have them in this house at the moment as husband has gone meat free and daughter doesn't like 'meat with bones in' (likes pork loin steaks though which is the same thing just thinner and minus the good bone bit).

Maybe he just doesn't like them?

He said they are dry?

How can I make a good pork chop? I'm determined to blow him away now Grin

I donr like pork chops. They're too chewy and dry. I don't mind sausages and bacon but roast pork and chops have a pissy taste to them. I can't explain but it's horrible.

I had never cooked duck before, until I did about 5 years ago. Now we love it as an occasional treat.

How is "you've never cooked it before" an argument as to why you shouldn't cook it now? It's always a good idea to try new things!

Do you have a shitload of onions?

If so, you could make this one:

We’ve made it without the sage and it’s still lovely (although the sage does make it even better).

I mean, it’s pretty rank to eat what is considered to be the fourth or fifth most intelligent animal in world. Having a chop off a puppy would be arguably less cruel. But if you’re ok with that then go for it

Pork chops are lovely. They're a standard meal in our house. Especially nice when the fat round the edge gets a bit crispy and caramelised.

Agree with the weird taste. I don’t like any kind of pork and avoid it where possible.

I love pork chops! Very nice with sweet potato wedges and buttered greens.

If you’re worried about dryness you could do a mustard and cream sauce with them, think Nigel Slater has a simple recipe.

Also brown them/crisp the fat first on a high heat and then turn heat down and cook them through with a lid on the pan - this helps prevent drying out.

Brown them (ideally with some fresh thyme if you have any), then take out of the pan and put in butter and a bottle of cider. Bubble the cider down, then put the chops back in and let them simmer for about 20 mins on a gentle heat. Just before you serve, take off the heat and stir creme fraiche into the sauce. Is divine!

Having chops tonight... honey mustard traybake...

Potatoes, carrots, shallots, peppers (and whatever veg is left at the bottom of the fridge) chopped in chunks, put in tray with pork chops. Make sauce/dressing with a glug of honey, another of Worcestershire sauce, spoon of grain mustard and pour it over the top. Put in a hot oven for 30-40 min. Minimal effort maximum taste.

I don't really like them but we have them now and again. I usually have pepper sauce or something with them to make them more palatable.

Well if they are dry you are cooking them wrong. I buy big thick ones from the local meat market, render in the fat in the pan first until it's brown and caramelised and then in the oven for about 15 mins, basting occasionally. Never dry, never overcooked, always juicy and moist

They are dry if grilled.

They tend to be more tender for me if I bake them in the oven in foil with some veg - onions work really well.

Also lovely with some apple sauce, mashed potatoes and cabbage.

Ooooh I want some pork chops now!

Oh do get lost. I'm fine with you being veggie but really? Preaching like that won't get you anywhere.

The very best way to cook them is on a hot BBQ. Failing that, pan fry them in a hot pan. Make sure they're sizzled all over but they really don't need long in the pan.

@whattocook it’s delicious! Bear in mind that if your oven runs hot I’d take it down 10 degrees from the temp he gives - I cook it at 160, which is equivalent to 180.
