Help me find this recipe or similar

A few years ago on here I was on one of those “what are you having for dinner” posts I came across a gorgeous recipe that a lady had posted...

It wasn’t a link, she just typed what she used and remember her saying that she was very flexible with what she used...

I realise this is very vague and the chance s of catching the same lady are slim to none it wondered if anyone had made or found a recipe similar. We have tried to recreate but it’s never been the same since the 1st time we made of the pack of the thread, my husband suggested it for dinner tonight and had the audacity to go to BBC food to try and find the recipe, so here I am!!!! 🤣

It was a slow cooked beef coconut curry, it had a lovely Thai taste and what I remember was the sweetness and depth of flavour before adding the coconut milk at the end and then topping with crushed peanuts and spring onions.

I think it had all the usuals in it, ginger, garlic, fish sauce but would love to know what gave the rest of flavour and sweetness...

I would put curry leaves or Thai basil leaves (or maybe both!) and lemon grass in as well.

Hmm still to be convinced, it definitely didn’t have potatoes in it like the above BBC food recipe and I can’t find anything similar in the above linked thread...

It will have had Palm sugar or jaggery in. If you can't get that, you can probably substitute brown sugar.

I've been looking at Indonesian, Thai and Vietnamese food a lot lately and there's quite a few things that have alarming amounts of sugar in for savoury food.
