I adore a plain, beautifully cooked and seasoned omelette. At most with a few chopped herbs but cooked on its own is fine. Served with a green salad - something like fresh little gem lettuce leaves or pea shoots - dressed lightly with lemon and olive oil.

Feta salad. Doesn't have to have anything much but salad, feta and balsamic vinegar for me

Scrambled eggs cooked slowly with lots of butter

Good bread with good oil and balsamic

Cheese and pickle sandwich - just a really mature cheddar and nice pickle, no salad

Carbonara (proper one, no cream etc!)

Pasta with proper tomato sauce.
Grilled chicken breast.
Spaghetti with clams - so quick, only a few ingredients but such good ones!

Marmite spaghetti. Melt a big knob of butter, add in a generous spoonful of marmite and a slosh of the pasta cooking water. Toss with the spaghetti and top with an obscene amount of cheese. Ridiculously delicious.

Poached eggs on toast for me too. Delicious and somehow wholesome.

mozzarella and tomato on some nice bread

Spaghetti with clams is what I was going to say originally but a PP got there first! Steam clams or mussels also great, and proper carbonara!

Scrambled egg on toast. Pasta and pesto. Or pasta with butter and grated cheese - this is my feel-better meal when I'm a bit poorly.

It all depends on the quality of your ingredients. Anything in season is delicious and needs little cooking.

Asparagus steamed, a little lemon and butter.

Blackberries and cream.

Roasted peaches with mascarpone.

Ripe beefsteak tomatoes, creamy mozzarella, basil, olive oil and salt.

Always, freshly baked bread still warm, generous amount of salted butter.

This jabbed in some burrata, maybe with some olive oil.

@redtshirt50 got there first, but tomato and fresh mozzarella on good bread, with some basil or pesto and a drizzle of olive oil if available.

A simple spaghetti pomodoro is second.
