Easy baked for half term

Hello,
Could you please share your easy, tasty bakes with me, in particular best, foolproof sausage rolls, individual cakes, large cakes and biscuits.
I'm not a natural baker but I'd like to get better and I'd like my children to learn to bake, I cook meals with them regularly but never bake!
Thank you. X

This is a fantastic choc cake. I generally do it in a small rectangle tin, if not icing it as a birthday cake, and serve it with custard or cream as a mid week pud but it makes great cupcakes too.

I made this last week - my tip for easy bakes is use a loaf tin and buy the liners - chuck in the tin and you get your whole cake out and no mess in the tin! www.bbcgoodfood.com/recipes/yummy-scrummy-carrot-cake-recipe?utm_source=app

Mary Berry victoria sponge is fool proof,
Short bread biscuits are also pretty easy.

If baking with a toddler you could buy a roll of fresh cookie dough at the supermarket and they can cut it and put it on the baking tray.

@Frequentlymisunderstood thanks for sharing. I love it when I see a recipe that looks a bit “splattered” as it shows it’s well loved. I have a couple of pages in a cookbook that are well splatted too because I use them so much! 😉

This never fails for me...

I don't bother with the vanilla, and I only use half the beaten egg.

Sausage rolls - buy puff pastry! Add some onion chutney if you have kids who will eat it.
Chocolate cake- the recipie above looks good.
Individual cakes - same recipe as above, but cook in cake cases at 190 for 12-15 mins. Omit the cocoa and milk if you want plain sponge cake.
Biscuits - we like Millies cookies
If you want to cut out biscuits search 123 biscuits in mumsnet recipies (just sugar butter and flour)
Brownies are easy, if you already have a square tin.
My kids also like making pizza - use a wrap as the base, smear of tomato puree then add cheese and toppings before cooking on a baking sheet for 10 mins at 200C

Use whatever toppings you like roll up cut and bake very easy

As Mary Berry doesn’t make her own pasty I don’t either Grin

This a great banana bread recipe with Biscoff spread - I also add in both milk & plain chocolate chips & chopped pecans.

Delia has a great sausage roll recipe. Buy the frozen pastry and enjoy. I use a little less onion but apart from that I never change it.

Muffins are always easy and quick.

Scones too and loads of different flavours to try.

With mini eggs now in the shops I'm planning on making some rice crispie cakes over half term:

Melt 3oz butter and 3 chopped up mars bars in a saucepan
Remove from the heat and add 3oz rice crispies
Spoon into cake cases, pressing down a little in the middle
Add mini eggs to the top of each one
Make sure there's some mixture left to eat hot out of the saucepan afterwards - the best way!

DD made the NUC mini egg cookies from here and they were the best cookies she’s made (she makes excellent cookies). www.janespatisserie.com/?s=Cookies. I also recommend the Mini Terry’s chocolate orange cheeecakes and crunchie brownies from the same site.

I was worried this was going to be a thread about getting stoned to cope with half term!

I also used this recipie to make biscuits yesterday:

Cream together 250g butter and 100g sugar (recipie said 140g sugar but I cut it down and they taste fine)
Mix in 1 egg yolk
Add 300g plain flour
Roll out and cut out
Bake at 180 for 15 minutes

I cut them into heart shapes and cut a smaller heart out of the middle of half of them. I'm about to go and make some buttercream (just butter, a splash of milk, then add icing sugar until it tastes like icing rather than butter - usually double the weight of the butter) and sandwich them together with jam and buttercream. The recipie said to chill the dough before you roll it out, but I chilled it after I cut them out instead and they've held their shape really well
