Thai green curry recipe?

I crave one, the internet is too sproadic with their recipes I want a tried and tested one if possible with actual measurements for 2 (greedy!) Adults.

Can anyone help me?

I feel the internet is giving me such random ratios of fish sauce / coconut cream that idk what to trust.

I've never made one before, I always order it but I'm trying to be less wasteful and save money.

It really is one of favourite foods & i want a fool proof recipe if possible .. Please?

It’s a bit of a cheat. But those blue dragon kits are good.
We get the pad Thai and the masaman ones and they are very nice.

I wondered but do those kits stretch to make enough sauce for 2 (fairly greedy!) Adults?

Nigel Slater’s is excellent

He has one where you make your own paste and one with shop bought

Have a look for Madhur Jaffrey’s green curry paste recipe (apologies, I am stupid and don’t know how to link on my phone). It’s worth making extra to put in the freezer, as she suggests - green curry whenever the fancy takes you!

If you love cooking and love curries, I’d highly recommend her book The Ultimate Curry Bible. Absolutely stuffed full of deliciousness đŸ˜‹

This Lorraine Pascale recipe is nice. Not fully from scratch but not too much effort either, and it's yummy.

I’ve done that Lorraine Pascale one before. It’s lovely but honestly it tastes exactly the same as getting a good paste and adding coconut milk. This one is fantastic I’ve used it loads of times, you can get it loads of places but in a show of authenticity they sell it in my local Asian supermarket!

Completely agree with @MustardMitt, Mae Ploy pastes are brilliant, I think the most authentic you can buy in the UK. Their massaman paste is also lush

Thank you all I've now bought some of the kits and ingredients for alot of these sites to come tomorrow, assuming their all in stock I'm totally ok eating the same food for a few days and maybe need to try multiple attempts to work out the recipe I'm after.

I've recently discovered that aldi do both a red and a green curry kit, similar to the red dragon ones. They are only £1.49, very tasty and FAR less faff than making it all from scratch.

I always buy and use 2 kits at once. The aldi one says to just add meat or veg, but I add a combination of whatever I have. Broccoli, peanuts, bamboo shoots, peppers, chicken, prawns or beef etc. A single packet always seems too little for 2 adults, and using 2 packets, you do have some leftover for the next day.

Mae ploy is the only decent option .

Do not whatever you do but buy the jar or ‘kit’ in the supermarket , no flavour!
