Brie that won’t melt

Bought the wrong one. In a big size.

Anything I can add to it that might make it melt or get a bit creamier?

Keep it in the kitchen as opposed to the fridge, it will be nice and ripe after a few days.

Like for dipping

Even on toast, you grill it and it has a rubbery texture.

I think it’s the wrong kind...pasteurised or unpasteurised, basically I bought the wrong one.

You want Camembert for melting and dipping really, rather than Brie.

I agree, the wrong cheese for what you want. If you want to melt it for dipping you need Camembert. Buy some more, eat the Brie separately

Its just not ripe enough.
If I'm buying a bog standard supermarket one, I buy a month in advance.

Maybe cut the rind off or cut it horizontally and grill it.

I think I’ve just got a very low quality one. I’ll keep it outside the fridge and see if that helps, thanks,
