What do you put in your chicken casserole?

Inspired by the 'what do you serve with a chicken casserole' thread.

DH always grumbles when I make one but I just love the thought of chucking something in the slow cooker in the morning and having a delicious, hearty hot dinner ready by dinner time.

Please share your delicious recipes with me!

My chicken casserole:
Chicken legs
Fresh rosemary, about a tablespoon
a stick or so of fresh chopped celery.
about 400g of button mushrooms, chopped
An onion, finely chopped
A courgette, roughly chopped.
Brown the chicken in olive oil, remove, and fry off the veges until soft.
Put the chicky babe back in the dutch oven,
Add 1/2 cup of white wine, put it on high, boil it for a minute.
Add a tin of tomatoes, and a bloody good dollop of tomato puree. Oh, and a table spoon of sugar.
Put in the oven at around 130, for a couple of hours. Thicken with cornflour, and add a handful or two of spinach, just before serving.

I posted this on the other chicken casserole thread too. But I’m happy to share it. Not quite a standard casserole but this National Trust mustard one is tasty.

Oh, and I serve it with creamy potato mash and a shit load of veges.

Boneless chicken thighs
Carrots
Green beans
Onion or leeks
Chicken stock
Loads of rosemary
Salt and pepper
Chicken gravy powder or granules to thicken it
White wine if i have it in

Literally Chuck it all in and simmer

Tinned tomatoes
Flagelot beans
Rosemary
Red wine
Stock
Paprika
Seasoning

You'd need to brown the meat and soften the onions and garlic first if doing in the slow cooker. Serve with rice.
