What’s for dinner?

My mum left me and the family a bag of black peas so I’m currently cooking up a Carby storm of back peas with carrots and celery, dauphinois potatoes and some veg on the side for a bit of greenery.

My house smells amazing and I love this time of year!

I have also no u her some rainbow carrots for a twist on a veg casserole for tomorrow night Grin

I have the most horrendous shingles which meant we had to cut our holiday short. Then we got home to news that a close family member of DP had died unexpectedly.

I think we deserve a takeaway tonight Sad

DD will be making chicken curry using a jar of sauce, over rice, with puppodums, for tonight.

I will probably do tomorrow as that is sausages and pasta sauce - although she may do that.

I haven't thought ahead to Thursday (maybe a Mexican fajita type wraps night), Friday DH wants proper fish and chips takeaway, and either Saturday or Sunday I want a proper steak dinner for my birthday.

I keep trying to get back into cooking properly, but work is very busy and DD is fussy when she's home (she stays in school past dinner time 3/4 nights/week but then DH and I are working so time not on our side to get creative).

I'm hoping to do roasted chicken thighs on a bed of tomatoes, onions and peppers one night next week, and a proper hearty beef stew another night.

We’ll be having chicken thighs with some tagliatelle in carbonara sauce with some peas and broccoli. I’m a bit obsessed with peas at the minute.

Indian butter chicken, pilau rice and Naan. It's in the slow cooker now and smells amazing.

Also baking cinnamon buns and Gingerbread men soon, just waiting for my butter to soften.

@MonkeyPuddle same on the pea front I’m adding them to everything at the minute. Even instant noodles (the curry type with peas are so good).

Thank you @Themadcatparade I don’t really feel well enough to eat but am having to take so many tablets that I feel worse if I have a completely empty stomach so having little nibbles here and there.
A naan bread dipped in tikka masala sounds perfect Grin

@lastqueenofscotland oooh nice I never thought about adding walnuts. I usually do mine with finely diced carrots, celery and mushrooms (we try and stay away from farty lentils if we can Grin )

@Turnedouttoes oh that does sound good, will defo fill an empty stomach!

Well you will have to make a promise to yourself that when you are all back up and well enough to eat properly you’ll have to treat yourself to the mother of all feasts!

I love squash!!

We do our risotto with leeks and mushroom and wine and loads of cream... squash is a new take on it I’ll have to look up a recipe

DS and I will be mailing some smartie biscuits this afternoon as well.
And I’ve got some chia seeds and fruit soaking in the fridge. Not tried it before but I’m about to give birth and could do with the extra fibre Grin

It's delicious! I roast most of it and make it into a puree before stirring it through the risotto with some cream and parmesan.

We’re having Korean marinated pork belly squares with rice and kimchi, wrapped in lettuce leaves. Some veg on the side but I haven’t decided what yet.
