Eating solo for the next two nights - what should I have?

I usually cook for 5 people every night and I've forgotten how to do this! DH is taking the DC to see his parents and I get to stay home (I KNOW!)

I need to go to the shops today as he's taking the car. What should I get? What did I used to eat when it was just me? Can't afford take-away unfortunately.

Crisps and wine covers all the basic food group requirements for a night on your own. You can eat actual food tomorrow.

Picnic style/party food?
My default is pasta.
Don't forget treats!

My husband and kids like a boring meat heavy diet. I tend to do something fancy and veg based when it's just me. With a very chocolatey dessert!

I love cooking for myself, here are a couples of my favourites

In a Wok, fry courgettes, peppers, onions, aubergine, garlic and chillies, add a tin of finely chopped tomatoes, a teaspoon of harissa, stir in a packet of ready made rice/bulgar wheat/quinoa/orzo. Serve with grated mozzarella/cheddar/blob of ricotta and fresh basil/chives/oregano/parsley. YUM

Thai red curry with king prawns, bamboo shoots and courgettes.

DH used to work away when DD was a baby and I used to love getting stuff just for ME. I used to always get Tesco finest fish pie and pasta meals as DH wouldn’t eat either. I would also have Iceland chicken wings and chips. But that’s not very MN!

  1. A lovely piece of meat or fish with new potatoes and salad or veg.
  2. cook something that the rest of the family don't like and leftoves go in the freezer! (in my case that would be cheese & onion pasty)

If it’s just me I get a pricier protein that I can’t usually afford - monkfish, rib eye, lamb shank etc.

I like the sound of this cheese-fest! DH and DD2 are allergic to dairy so I am planning on getting as much in as I possibly can!

On the very rare occasion I get the house to myself I always have devilled kidneys on toast! DH and the kids cannot even bear the smell of kidneys, so I can’t have them when they are around.
The dish always reminds me of my absolutely lovely DFIL, a generous man who shared my love of offal. We would occasionally cook up a storm to the horror of the rest of the family, God rest his soul.

I’m not suggesting you cook kidneys, by the way...I realise they are pretty niche!

I so rarely get a chance to cater just for me. I'd choose two from the below:
Greek salad, pitta, tsatziki and a jar of gigantes beans
Mushrooms on posh toast
Posh cheese and crackers with figs and black grapes
An omelette with mushrooms and onions cooked separately, with salad and lovely bread
A Higgidy quiche with salad and bread.

Olives, those little stuffed peppers and salted pistachios for picking.
Various creamy desserts - creme brulee etc

I'm a single parent. I buy my treats when I'm feeling virtuous. 2 glasses of wine in I always wish I'd bought more. Have you watched This is Us yet?

Breakfast: freshly baked croissants, or other pastry of your choice (just buy a pack of frozen ready to bake ones) with champagne or Prosecco. Earl grey tea for after.

Love offal and fish, so usually treat myself to something like that if OH is away, he's not a fan. Definitely wine to please yourself. For breakfast second croissants or pain au chocolate. Could you get a free trial for Netflix or Prime to find something to over indulge with and then cancel - found the Amazing Mrs Maisel which was great fun.
