Does anyone know what qualifications / standards / registrations etc do I need to be looking for when finding someone who can fit a new boiler please??
Thank you!

Thank you. Is that all they need to be?

Yes but also, I found Which? really helpful. I found our engineer through Which? recommended engineers (I can't find the link now). I've heard good things about BOXT boilers as well which I'd have gone ahead and used had I not already booked our installation.
Also, see if you might be eligible for a boiler grant (it can be quite an expense).

Search the register and ask for recommendations from family and friends for heating engineers and get a few quotes. If you're looking to get one now, ask for timescale as they're often booked up. We ended up chosing the most expensive as he really seemed to know his stuff, but also he could install quicker (we had no heat or water for a month).
