Don’t want to scroll by but I’ve only been to Edinburgh to the Tattoo which was amazing and the streets were very busy with stalls and entertainment.
I’ve no idea what it’s like when the festival isn’t on but it is a gorgeous and amazing city.

To eat try Bar Italia Lothian Road up from Sheraton Hotel. Small Family owned cosy Italian lovely staff. Also walk up/down Cockburn Street - lots of character - and eat /snack at Viva Mexico - best margaritas ever.
Wander about Princes Street Gardens and shop on George Street. Tiger lily George st for ladies who lunch glamorous surroundings or cocktail. Copper blossom nice too.
Walk from princes street past art gallery (may be open again now) up Mound to Old Town and have a wander on Royal Mile. Enjoy! The sun is (currently) shining but bring a hooded coat/ brolly. It’s only 14 degrees today.

I second Mary King’s close, the tour was amazing.

I went a couple of years back and did the castle, really good but in August it was only open with sever restrictions like no Crown Jewels or even the actual Royal Palace. So check carefully whT “open” means if you look for anything specific.

We did the Palace of Holyrood, if you like a Palace like Windsor or similar it may be for you.

We loved just wandering around the old part of the town, the new part is more general shopping streets.

Have a wander up Calton hill or through the Botanics. Maybe go from the Botanics to Stockbridge and mooch the cute shops and find a cafe.

We did the tour of the Royal Yacht Britannia which far exceeded our expectations, fascinating and great value. We also visited the Botanical Gardens, the glass houses were amazing and the Hop-On-Hop-Off bus (recommended) stopped there.

I've been to Edinburgh solo before. The stand out memory was walking down to Dean Village. So pretty.

I didnt really make any plans before going, just walked about.
