We don't make a traditional Christmas cake as it wouldn't get eaten, and I'm not a fan of mince pies although I might buy a few.

I'll make some gingerbread and a rich chocolate cake to decorate.

I'd love some other ideas though smile

About three days before Christmas I'm doing Merry Berrys Gingerbread Cake. I also ice it and decorate it. It is really very lovely.

Everyone's getting variants on rocky road as pressure this year. It batch fridges bakes well!

torthecatlady Sat 09-Dec-17 13:15:55

Orange and cranberry muffins. They are fantastic warm and very Christmassy!

MipMipMip Sat 09-Dec-17 13:19:29

Those around lovely For! Would you mind sharing the recipe?

Bananajam Sat 09-Dec-17 13:20:13

Fudge - so far I've made chocolate orange and cherry and almond, I'll probably make a batch of coffee fudge too. I also make salted caramel millionaires shortbread. They get boxed up and given as gifts plus plenty leftover for us and any visitors.

Christmas cake is in the cupboard/ need to decorate.
Gingerbread men in the tin - they will be gone by the end of week. December is the only month they are made!
My brother has requested a Yule log - I’ll do that the day before I travel.

Nothing. There are only three of us. I can't make a Christmas cake small enough for our needs, I'm not prepared to turn the kitchen into a sauna for a Christmas pudding that only two of us will eat, and quite frankly will taste no better than a bought one.

Family lives miles away and we won't be seeing them over Christmas so there is no-one else to bake for.

lucysmam Sat 09-Dec-17 13:35:45

I haven't made a Christmas cake this year. Dd2's birthday is the 28th so we always end up over-run with cake.

I've made, and frozen, several batches of gingerbread dough. Currently making lots of pastry for mince pies/quiches but have run out of flour so any more will have to wait. Unless I use sr flour; can't decide whether to or not fhmm

Last year I made Paul Hollywood's Christmas spiced loaf. Never again - 'twas naice but took nearly two days to make because there was so much proving.

zeebeedee Sat 09-Dec-17 13:41:22

My mum is making the Christmas cake (she'll make a big one, and then cut it into quarters to share out) I'm thinking of making one of those nutella christmas tree tear and share things....

@maddiemookins16mum do you have a recipe for the Mary Berry gingerbread cake? Sounds delicious!

AnnabelleLecter Sat 09-Dec-17 13:52:18

Lemon cheesecake
Christmas biscuits
Yule log
Jelly
Easy stuff

I have already got some meringues, ice cream and mini marshmallows for a quick pud and will buy a Tiramisu.

MiddlingMum Sat 09-Dec-17 13:56:30

Mmmm, I feel a baking day coming on smile Everything sounds delicious.

Cranberry and white chocolate cookies, Christmas rocky road and chocolate shortbread from Nigella Christmas book. Chocolate Brownies and Blondies from Sue Lawrence, book of baking. Lots made and bagged up and given away. Probably a pavlova, a chocolate cake for our house. DS1 birthday on 27th and my Mums on 28th. My son was my favourite person ever when he requested a big plate of brownies, blondies for birthday cake, most relaxed boxing day ever

Alwaysinmyheart Sat 09-Dec-17 14:02:07

Lebkuchen! Am making a Christmas hamper and this is one of the things that is going in it. Have made them 3 times now and finally perfected them😀

neonrose Sat 09-Dec-17 14:23:10

Ooh all sorts!
Lemon tart
Gingerbread (cake)
Brownies
Individual lemon cakes (love these cake tins www.lakeland.co.uk/70171/Lakeland-12-Hole-Loose-Based-Mini-Sandwich-Tin)
Mini lemon and white chocolate cheesecakes
Mini salted caramel eclairs
Lemon meringue roulade
Vanilla tart
Salted caramel and chocolate tart
Peanut butter fueilletine squares
Almond roca
Spiced nuts

I have lots of socialising planned!

I also love a pavlova and have savoiardi biscuits so there might be a tiramisu (hazelnut rather than coffee).

torthecatlady Sat 09-Dec-17 14:25:58

Here's a link to recipe I use for the muffins, if you scroll halfway down, there's a list of ingredients and the method.

I don't bother putting yoghurt in, but make sure you put loads of orange zest in. They are lovely with or without the glaze.

I always make them and take them with me if I'm visiting friends or family.

We've made shortbread into trees, stars and gingerbread man shapes this morning. Will be doing choc shortbread tomorrow and decorating with melted choc and sprinkles. Some for us, some for teachers and some for a friend having cancer treatment.

For Christmas itself I'm going with a igloo cake decorated with penguins. a mix of Victoria sponge and chocolate. None of us like Christmas pudding.

MipMipMip Sat 09-Dec-17 15:05:49

Thanks Tor! Sorry about previous autocorrect hmm

CuppaSarah Sat 09-Dec-17 15:30:31

Just got my first piping set, so I'm going to make some cupcakes like this, only with cinnamon and caramel. I'll do red, white and green icing too. I have some sugar Christmas trees and sugar holly leaves to decorate. Maybe the red icing will be cinnamon and the white caramel.

YouCantBeSirius Sat 09-Dec-17 15:38:31

I'll make a Yule log for Christmas day. Will probably make gingerbread men and stained glass window biscuits with the DDs.

goose1964 Sat 09-Dec-17 15:49:32

I've already made the cake and the pudding. I'm starting the mince pies on Monday. DS1 does the stollen now. I'm going to make some cookies for The non fruit eaters but still thinking about it

SleightOfMind Sat 09-Dec-17 15:49:58

Always,
I love lebkuchen! Army child so spent a good chunk of time in Germany.
Have tried to make them twice and, while they were lovely, they didn’t taste the same at all.
Would it be very cheeky to ask for your hard earned recipe and tips?

eeyoredebbie Sat 09-Dec-17 15:50:01

I’m doing Slimming World so all of mine are SW friendly

Vegetable samosas
Sausage rolls (filo)
Salted caramel cheesecake
Sweet mincemeat filo parcels

DH has made our Christmas cake which I will have small slivers of and I’ll come back and add photos smile
