What's your favourite Quasadilla combination?

I hope I've spelt quasadilla correctly blush

We are having cheese, chicken and red onion but I bet there are some rand. Combinations that are better.

Serving with nachos and dips

Spring onion, mango, Brie and chilli flakes. Pinched out an old Good food mag years ago and still a favourite here.

Last two suggestions are going on my list!

I've mixed together - cheddar, halloumi, mozzarella, cooked onion, cooked chicken plus diced ref pepper...

Try sautéed mushrooms, Cheddar, spring onion and steamed chopped kale! Delicious.

Red kidney beans, spring onion, sliced avocado, salsa and cheese.
Or with hummous substituted for cheese to make it vegan (and fusion!)

Tesco and Asda both do tins of chilli style beans, like a spicy tomato sauce, these are good, or black beans. We like to add some uncle Bens Mexican rice. We alternate between chicken, chilli con carne or sometimes chopped ham.
Cheese, red onions are a staple and depending on what we have in we might add lettuce, chopped tomato after cooking, there's lots of options that would taste great. I'm starving now reading this thread!

broad beans, feta and mint

waxy boiled potatoes, onions and chorizo

leftover chicken added to reduced tinned tomatoes with allspice, cinnamon and chillies

I do a total cheat inauthentic version with tinned chilli beans, grated cheese, chillies and spring onions.
I cook them in my panini press, the whole of Mexico would be horrified!

Ilove quesadillas.

My favourite is chorizo, garlic, potato, onion and wensleydale, copied from a Wahaca menu item from when they first opened.

Also tuna, onion and cheese.

Going to copy some of these ideas and also do my favourite as I have chorizo and wraps that need using up.

Panini press sounds like a great way to cook them - I do them in a frying pan and lose half the filling when I flip them over.
