Christmas Fudge

How do you actually make fudge?
Can you do different flavours?
How long does it keep?

Desperatly want to make something more personal for my dad this year but i seem to be crap at most things! please help x

thanks - never realised that there is so little butter in fudge - well, not that little i suppose; i always considered it to be yummy but about as nutritious as a block of lard. i may give this a go - do you think a sugar thermometer is necessary or can you simply exercise your judgement as to what stage you are at

I have never used one (but I haven't made fudge for ages!). Delia's recipes are normally great.

white choc and cranberry fudge this recipe is incredibly easy and yum. It will last 7-10days in the fridge. usually make it at the latest 2 days before it needs to be given. use a heavy based pan and it won't burn. I've also adapted it by using dark choc and raisins soaked in rum. this works well too.

if you also search the archives for eisvolds white choc and cranberry fudge. thats easy too and doesnt have the cream and lasts a bot longer.

Try:

75g full fat cream cheese
350g icing sugar
1 level tablespoon cocoa powder
75g plain chocolate
40g butter
greaseproof paper
15cm square cake tin

PUT THE TIN ONTO A SHEET OF GREASEPROOF PARE AND DRAW AROUND IT. cUT OUT SQUARE, OIL ALL OF TIN, PUT PAPER SQUARE IN AND GREASE TOO.

Put cream cheese into bowl, sieve dry ingredients, mix well.

Melt butter and chocolate together then stir into mixture, and beat till creamy.

Spoon into tin.

Put into fridge for two hours or till firm.

cut into 36 squares.

DO NOT EAT< YOU WILL NOT STOP.

We have been making this for years and have never found a better one.

WailingGhoshe yours sounds the simplest so far, how long will it keep for? Thinking of indiviually wrapping pieces to go in my night in boxes.

Mine kept in the fridge for a fortnight, dont know out of the fridge tho.
