Vegetarian main that can easily be reheated?

Hi!

I’ll be going to my Mum’s for Christmas dinner and it’s my first as a vegetarian and don’t want to cause extra stress for her, so was planning on buying/making mine and cooking it the day before and reheating Christmas Day! I feel like the microwave would be the least in the way option for her 😂

Does anybody have any suggestions please?

I usually just have a quorn/meat free alternative to the meat and have everything else like the potatoes (as long as not cooked in animal fat) and vegetables.

I'm a slightly fussy vege! I usually have stuffed peppers, a risotto of some kind or roasted veg lasagne!

...plus all the veg that everyone else is having. But make sure the potatoes are cooked in vegetable fat.

I just came across this recipe this morning: Smitten Kitchen Galettes - says they can be made up earlier and then gently reheated on the day.

I might play around with the fillings for a slightly more festive take on it. I'm the vegetarian in this scenario (and slightly fed up of the usual M&S xmas nut roast).

Lasagna or moussaka are my mum’s veggie favourites. I usually make enough for everyone as my brothers are greedy sods and start on her veggie meals once they’re done with the chicken

I used to make a nut roast and bake it in advance. It only needed a few minutes in the microwave on the day.

I was in Aldi this morning and they have some nice looking individual veggie tarts in the deli section. 3 different ones to choose from.

I like the quorn roast for a really easy roast dinner, cook it the day before and don't worry about reheating it. Just slice thinly and cover in hot gravy, plus it means you've got leftovers for boxing day to go with mash and pickles. Alternatively Rose Elliott does a v good carrot and pine nut loaf that my veggie sister makes (I'm too lazy)
