What sauce with leftover gammon?

On Boxing Day for lunch we're having leftover roast chicken & gammon (probably more gammon than chicken) with mashed potato & petit pois with bacon.

What sauce to go with? I don't think gravy will work with gammon.. would you do a parsley sauce? Or something else?

Parsley sauce, with LOTS of finely chopped parsley, not the measly 2 tablespoons I've sometimes seen in recipes.
And mash!
Any leftovers of sauce, little bits of gammon and mash go beautifully in an all-purpose soup.

Parsley sauce! If I were you I would make sure that the milk for the béchamel base is really really infused with a bouquet garni.

Boil the milk as early as you can with bay leaves a sprig of thyme, a clove studded onion, some parsley lots of black pepper and a carrot. Let the milk simmer for a little while then cool at room temperature. And use masses and masses of flat parsley.

BEANS! Heh. I so would, but in the interest of proper Xmas etiquette....
is it being served cold? In that case, chutneys - caramelised onion would be a good one. Pickled onions etc yum yum

Delia's Cumberland sauce.

Onion sauce (ie white sauce with onion in it Wink )

Parsley sauce.

Onion marmalade.

Your favourite chutney/piccalilly.

I am not sure that I would put bacon with it though, since it is sort of bacon in the first place.

Whole grain creamy Mustard sauce, as it would work well with gammon and chicken.

Well it is traditionally Cumberland sauce, but i do enjoy a bit of parsley sauce!

I would also suggest Delias Cumberland sauce as its just so delicious. Or parsley sauce, with fresh parsley would be really good too.
