What gorgeous vegetable dishes can I make this Christmas?

I usually just do the traditional roast vegetables with sprouts boiled! Can anyone tell me anything more festive and lovely? No meat in it please.

Hassle back potatoes

Sprouts in rosemary and cream
Parsnip and sweet potato wedges

Cauliflower cheese

Not necessarily for Christmas lunch but we adore celeriac dauphinoise. It goes brilliantly with pork or gammon.

I used to have a recipe where you shred the sprouts after cooking and mix with double cream and nutmeg. I can't remember the quantities but it was amazing. Sprout hater dh hoovered it up.

Not waist friendly mind you.

I serve my sprouts with butter, some fresh lemon juice and some warm chopped chestnuts. Lots of salt and pepper. Yum.

Glazed onions - peel a load of pickling onions, put in a pan and only just cover with water, add half a teaspoon of brown sugar and half a veg oxo. Bring to boil and leave to simmer for 29-30 mins. Onions will soft & sticky, lovely with turkey & stuffing.

Cree - those onions sound gorgeous.
Squishy - ditto the mushroom bake.

I like steamed carrots glazed with honey and sprinkled with fresh thyme. Looks and tastes good but takes no more time than bog standard boiling.

Roast butternut squash with wild rice, feta and herb stuffing baked into the hole where seeds were. Can also add other flavourings like sumac, cinnamon, pine nuts, pomegranate seeds, etc

I shred sprouts and stir fry them with chopped roasted hazelnuts and bacon lardons (which you could omit). Takes around 10 mins while waiting for roast veg to finish off.

Either roast sweet potato (cooked similarly to normal roast potato, except it won't take as long to cook, and will be infinitely more delicious). Or, mashed sweet potato. Especially superb with a bit of added feta, and perhaps, a hint of chilli.
I really should be on the marketing board of sweet potato. It is God's own vegetable.
