Night before veg

Officially the world's most boring thread, sorry! However, need to prep veg on Xmas eve-am going to roast parsnips & celeriac, should I keep them in lemon water overnight, or will they be ok in the tin in oil? (worried celeriac will go brown...)

Not done cereriac but carrots parsnips and sprouts I do Christmas Eve and put in freezer bags with about 2 tablespoons of water and shake then store in fridge. Potatoes can be kept in a bowl of water once peeled or they can be parboiled Christmas eve then freezerbag (no water) and in fridge. I parboiled last year and it worked.
