Looking for fresh inspiration. These have worked for me in the past:

dcs pants on the xmas tree
toilet roll unravelled through the house
messages in lipstick on bathroom mirror
messages on blackboard
fishing in toilet (fish made from carrots)
Rock star with barbies as backing group

Day one -with pumpkin seeds (coloured with paint) visibly pointing out of earth in plant pot
Day two - seeds gone replaced with little bits of green tinsel
Day three - lollypops sprouting from tinsel shoots

What's worked for you?

Our elf made a santa from lego
Made a zip slide from toilet paper from wall lamp to ceiling lamp and hung in the middle.
Made a shoe train - line up shoes and he sits in the first one.
Had a snowball (marshmallows) fight with other toys

Have a look on Pinterest as there are loads of ideas.

My current favourite - changing the DCs bedding whilst they're asleep into their christmas bedding (has to be timed carefully so they are very asleep!) and sitting him in the laundry basket.

I knotted loads of pairs if pants together and strung them across the room to make a swing grin I also made fisherman's waterproofs out of an old rubber glove and sat the elf on the side of the sink to fish for Octonaut toys.

Drawing silly pictures of everyone, with captions

Hiding in DS's school shoe

I also did some nice stuff e.g. DS was sad at never getting any post addressed to him (lots of parcels arriving for me and DH due to Christmas shopping) so the elf sent him some festive socks with a little note.

Along with a lot of others,
Mine set up a zip wire going from the tree to his 'bed' and was caught taking the chocolates on the tree and hiding them in his bed.
He also got together with a few other toys and had a poker party.
Going fishing on the edge of our goldfish bowl
Abseiling down the side of the house

We did him sat in front of the laptop (with empty sweet wrappers) & had typed into Google 'how to get rid of Elf flu' and the next night put him on the sofa, tucked under a blanket with a pile of screwed up tissues, bottle of calpol & spoon - DC thought it was brilliant grin. Head first in the box of Cheerios is a good but quick one.

Things our elf has done:
Eaten a box of chocolates and then brought a replacement box the next night.
Made herself a bed in the tissue box
Hung DD's underpants on the tree
Stayed up all night playing video games
Drank syrup out of the bottle with a straw
built a small snowman and hung out with him in the freezer
Played dress up with doll clothes
Changed the computer desk top picture to a picture of herself
Got tied up to a table leg by toy pirates (not sure what she did but they seemed quite upset with her)
She and dolls did each others hair
Rode the ceiling fan
Led a parade of Littlest Pet Shop pets down the hallway
Covered the living room doorway with wrapping paper
Finished stringing garland on our tree
Was very sick once and tucked herself in on the couch with tissues, thermometer and Vicks Vaporub
Pulled all the books off of DD's book shelf and sat on top of the pile reading "Twas the Night Before Christmas"

Love these ideas! & nicking lots for this year. One fave from our elf last year:

Made snow angels out of flour mixed with glitter on table

Oh I have a logistics question....

I know the children are not meant to touch the elf, so what do you do after you find him in the morning?

Does a grown up basically just say "oh deary me!" And pop him back on the shelf?

Put himself inside a balloon.

Took an 'Elfie' with my camera, left the camera beside him.
