Brine/marinade/roast in bag turkey?

Doing a small turkey crown and not even sure what the first two involve!

I put butter under the skin, keeps it lovely and moist. A chef friend told us recently that you should cook it upside down and then the juices run through it. You turn it back for the last 40 mins to crisp up....apparently.
