DS and I are making pizza for Boxing Day....dough recipes please :)

In case I've forgotten anything -I can get it tomorrow.
I've got-
strong white bread flour
Dried yeast (Hovis)
Olive oil
Eggs
tomato puree/pizza sauce
mozzerrella + cheddar
onions, olives,peppers, mushroom

My lovelu new Kenwood KMix has a dough-hook so it can do the hard work
And when I've made bread in the past I've proved the dough in the empty dishwasher (while it's still warm)


So, what do I need to do to make a lovely pizza dough?

I use 00 flour, fresh yeast. Try to prove for longer at a slightly cooler temperature, about two hours is good. Try this www.kenwoodworld.com/uk/cooking-with-kenwood/recipes/cooking-chef-recipes/pasta-rice-and-grains/pizza/

For pizza sauce take half an onion chop very finely, sweat, add a can of tomatoes, tomato paste, tsp of sugar, herbs. Cook for around 20 minutes very gently until the liquid is all gone and it's spreadable.

To cook if you've got a BBQ with a lid and a pizza stone that's good, but if not jut get the oven as high as it will go 250c or whatever, preheat your tray (stone is best because it absorbs heat), stretch/roll dough onto stone/tray, spread sauce, grated mozzarella, toppings. Crack raw egg onto top as you place it in the iven, Cook until crispy, time will depend on how hot your oven is.

Semolina makes the dough crispier - i tend to use this recipie jamie oliver one.

Keep your topping sauce and topping quite dry - otherwise you will have a soggy middle!
