Which desserts can I prepare in advance and freeze?

I'm doing some salted caramel profiteroles in advance for Xmas day. I'll fill them and then pop them in the freezer and on the day just melt some chocolate to pour over them. Choux pastry is suprisingly easy, the only fiddly bit is spooning it or piping it out on the baking tray

I just buy a strawberry gateau and a chocolate one, for the daftest of reasons - when put together side by side they fit the width of the freezer shelf almost exactly.. so I can get more stuff in on top of them...

There's a recipe for chocolate truffle torte on the BBC Good Food site which is easy to make and freezes very well indeed. It's very rich and so you could probably feed 10 easily.

I can't link from my phone but I googled and found it easily enough.
