Christmas

Just marzipanned the cake. What do I do now? Does it go back in the tin?

Not sure what to do now! I am sure my Mum used to put it under a massive bowl but 1, I don't have room for it lying around and 2, my bowl isn't deep enough and 3, we have mice and I don't want the wee buggers sniffing round my Christmas cake.

Will it dry if I shove it back in the airtight tub where it has been for the last few weeks?

I usually wrap it loosely in greaseproof paper and put it in a tin with the lid slightly loose. That might not be mouse proof though. I think it will dry out OK even it you have to put the lid on firmly. To be honest I think it is only a problem if you ice when the marzipan is really fresh. Says she who is internetting instead of doing hers!

The marzipan needs to dry so don't put it in a sealed tin or it will sweat.

Thanks! I have found a place where I can take the lid off the box and be safe from mice.

Or at least I think I have.

Unless mice can scale slippery units and 50cm high boxes that is. I reckon if they manage then they damned well deserve some cake for being so agile!

yes, I know, but they would also have to scale across the bottom of the unit upside down to get at it!!!

Either that or use a rope.
