Delia's Christmas cake

Hi.

I am going to be making this today with dp's dd's and my dd, we weighed out the fruit to soak last night.

Has anyone made this before ? It looks like an awful lot of fruit compared to the size of the tin we are told to use, did anyone else find this ?

I always use Delia's recipe, without the peel as we all hate it, and it's delicious every time. There does seem a lot of fruit but when it's all mixed in it fits.....x

I soaked my fruit overnight too! Have done it for a couple of years now and it is delicious.

If you've followed the recipe it'll be fine. Cake is lovely but keep an eye on the timings. It says something like 4 plus hours but IME it takes nowhere near this. I made 2 last weekend, one round & one square (the square tin was slightly larger than on the recipe) but I checked the round at 3 hours & it was done (& could probably have been in 10 mins less) & the square was done after 2.5 hours! That was in fan oven at the temp in the recipe. So just make sure you keep checking & wrap the outside of tin in brown paper or newspaper.

I've done hers before it was lovely. I'm making ours next weekend, but am going to try James Martin's one in this month's good food magazine. Looking forward to it, love making the cake.
